Cheesy Chickpea Waffles With Mushrooms & Wilted Spinach

INGREDIENTS
Chickpea flour - 100 grams
All purpose flour - 100 grams
Baking soda - 2 teaspoons
Salt - 1 teaspoon
Vinegar - 2 teaspoons
Eggs - 2
Olive oil - 30 milliliters
Parmesan cheese - 40 grams
Mozzarella cheese - 40 grams
Milk - 200 milliliters
Spinach - 500 grams
Salt - 1/4 teaspoon
Butter - 30 grams
Mushrooms - 150 grams
Salt - 1/4 teaspoon
Dried basil - 1 teaspoon
Chilli flakes - 1 teaspoon
Butter - 5 grams
Egg - 1
Oil - for brushing
PREPARATION
1. In a mixing bowl, add 100 grams chickpea flour, 100 grams all purpose flour, 2 teaspoons baking soda, 1 teaspoon salt and mix it well.
2. Add 2 teaspoons vinegar, 2 eggs, 30 milliliters olive oil, 40 grams parmesan cheese, 40 grams mozzarella cheese, 200 milliliters milk and mix it well to make a thick batter.
3. In a skillet, add 500 grams spinach and cook for 3 - 5 minutes.
4. Add 1/4 teaspoon salt and mix it well.
5. Heat 30 grams butter in a pan, add 150 grams mushrooms and roast until it turns golden brown in color.
6. Add 1/4 teaspoon salt, 1 teaspoon dried basil, 1 teaspoon chilli flakes and mix it well.
7. Cook or 2 - 3 minutes on medium heat.
8. Remove it from heat and keep aside.
9. Heat 5 grams butter in a another pan, add 1 egg and cook for 2 - 3 minutes one medium heat.
10. Remove it from heat and keep aside.
11. Take a waffle maker and brush it with oil.
12. Pour the batter into it and cook until it turns golden brown in color.
13. Remove it from waffle maker and place it on a serving plate.
14. Top with fried egg omelette, spinach and mushrooms.
15. Serve.
