Kiwi Vanilla Cupcakes with Kiwi Buttercream Frosting

INGREDIENTS
Cupcake
Unsalted butter - 110 grams
Granulated sugar - 100 grams
Egg whites - 2
Egg - 1
All purpose flour - 250 grams
Salt - 1/4 teaspoon
Baking powder - 1 teaspoon
Vanilla extract - 1 teaspoon
Milk - 80 milliliters
Mashed kiwi - 80 milliliters

Frosting
Unsalted butter - 110 grams
Mashed kiwi - 60 milliliters
Vanilla extract - 1/2 teaspoon
Icing sugar - 100 grams
Salt - 1/8 teaspoon

 

PREPARATION


Cupcake

1. In a mixing bowl, add 110 grams unsalted butter, 100 grams granulated sugar and mix well. Add 2 egg whites, 1 egg and mix it again.
2. Add 250 grams all purpose flour, 1/4 teaspoon salt, 1 teaspoon baking powder, 1 teaspoon vanilla extract, 80 milliliters milk, 80 milliliters mashed kiwi and mix it again.
3. Divide the batter between muffin cups.
4. Preheat the oven to 350°F/180°C. Bake muffins 25 to 30 minutes or until tops are no longer wet.

Frosting
1. In a mixing bowl, add 100 grams unsalted butter, 60 milliliters mashed kiwi and mix well. Add 1/2 teaspoon vanilla extract, 100 grams icing sugar, 1/8 teaspoon salt and mix it again.
2. Begin to pipe the frosting onto a cupcake, starting with the outside edge and working your way into the center of the cupcake, progressively stacking the frosting as you go around in circles.
3. Garnish each cupcake with a kiwi slice.
4. Serve and enjoy!
