Zarda Rice (Sweet Rice)

Servings - 3 - 4

INGREDIENTS

Water - 2 litre

Salt - 1/2 teaspoon

Water - 2 tablespoons

Organic food color (Orange Red) - 2 teaspoons

Soaked rice - 300 grams

Ghee - 100 grams

Cardamom - 4 pods

Cloves - 4

Sugar - 200 grams

Kewra essence - 1 teaspoon

Tutti frutti - 2 teaspoons

Almonds - 1 tablespoon

Pistachios - 1 tablespoon

Khoa - 2 tablespoons

Gulab jamun

Rasgulla

PREPARATION

1. Soak 300 grams rice in sufficient water for 3 - 4 hours.

2. Heat 2 litre water in a pot, bring it to a boil.

3. Add 1/2 teaspoon salt. Take a bowl, add 2 tablespoons water, 2 teaspoons organic food color (orange red) and mix it well.

4. Add it to pot and mix well.

5. Now, add 300 grams soaked rice and mix well.

6. Bring it to a boil or cook until rice are done.

7. Strain rice and set aside.

8. Take a another pot, add 100 grams ghee, 4 pods of cardamom, 4 cloves and stir well.

9. Add boiled rice and mix it well.

10. Now, add 200 grams sugar, 1 teaspoon Kewra essence and mix it well.

11. Cook until sugar completely dissolves.

12. Add 2 teaspoons tutti frutti, 1 tablespoon almonds, 1 tablespoon pistachios, 2 tablespoons khoa and mix it well.

13. Cover it with a lid and cook for 10 minutes.

14. Transfer the rice into serving dish.

15. Garnish with tutti frutti, khoa, rasgulla, gulag jamun, almonds and pistachios.

16. Serve.
