Curd - 200 grams
Onion paste - 100 grams
Garlic - 2 teaspoons
Ginger - 1 teaspoon
Oil - 15 milliliters
Turmeric - 1/4 teaspoon
Nutmeg - 1/4 teaspoon
Salt - 1 teaspoon
Paprika - 1 teaspoon
Garam masala - 3/4 teaspoon
Boneless mutton - 500 grams
Oil - 50 milliliters
Cinnamon stick - 1 inch
Cloves - 4 pods
Black cardamom - 2 pods
Green cardamom - 2 pods
Cumin - 1 teaspoon
Water - 300 milliliters
Ghee - 40 milliliters
Onions - 120 grams
Ginger - 1 teaspoon
Tomato - 150 grams
Salt - 1/2 teaspoon
Green chili - 1 teaspoon
Meat masala - 2 teaspoons
Cumin powder - 1/2 teaspoon
Garam masala - 3/4 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Water - 30 milliliters
Coriander - for garnishing
PREPARATION
1. In a mixing bowl, add 200 grams curd, 100 grams onion paste, 2 teaspoons garlic, 1 teaspoon ginger, 15 milliliters oil, 1/4 teaspoon turmeric, 1/4 teaspoon nutmeg, 1 teaspoon salt, 1 teaspoonpaprika, 3/4 teaspoon garam masala and mix it well.
2. Add 500 grams boneless mutton and mix it again.
3. Marinate for 1 hour.
4. Heat 50 milliliters oil in a pot, add 1 inch cinnamon stick, 4 pods cloves, 2 pods black cardamom, 2 pods green cardamom, 1 teaspoon cumin and stir well.
5. Add the marinated mutton it and mix it well.
6. Now, add the remaining marinated mixture in it and mix it again.
7. Add 300 milliliters water and stir well.
8. Bring it to a boil.
9. Cover it with lid and cook till you hear 6 whistles.
10. Remove it from heat.
11. Heat 40 milliliters ghee in a pan, add 120 grams onions and fry till translucent.
12. Add 1 teaspoon ginger and stir well.
13. Then, add 150 grams tomato, 1/2 teaspoon salt and saute until it turns soft and pulpy.
14. Now, add 1 teaspoon green chili, 2 teaspoons meat masala, 1/2 teaspoon cumin powder, 3/4 teaspoon garam masala, 1/2 teaspoon red chili, 1/2 teaspoon coriander powder and mix it well.
15. Add 30 milliliters water and stir well.
16. Cook for 5 - 7 minutes on medium heat.
17. Now, add the cooked mutton in it and mix it well.
18. Cook for another 3 - 5 minutes on medium heat.
19. Garnish with coriander.
20. Serve hot.
