Schezwan Mayo Potato Wedges

INGREDIENTS

Potatoes - 500 grams

Water - 1 litre

Salt - teaspoon

Corn flour - 30 grams

Baking powder - 1 teaspoon

Oil - for frying

Mayonnaise - 150 grams

Schezwan sauce - 70 grams

Oregano - 1 tablespoon

PREPARATION

1. Take 500 grams potatoes and cut it into wedges.

2. Wash them well.

3. Heat 1 litre water in a pot, add 500 grams washed potatoes, 1 teaspoon salt and bring it to a boil.

4. Drain them well.

5. Add the potato wedges in a ziplock bag.

6. Then, add 30 grams corn flour, 1 teaspoon baking powder and shake it well.

7. Freeze for 2 hours.

8. Heat sufficient oil in a heavy skillet and deep fry these till golden brown and crispy. Drain it on an absorbent paper and keep aside.

9. In a bowl, add 150 grams mayonnaise, 70 grams schezwan sauce, 1 tablespoon oregano and mix it well.

10. Pour this sauce over the prepared potato wedges.

11. Serve and enjoy!
