Subway Veggie Patty Sandwich

Servings - 2

INGREDIENTS

(For Dough)

Dry yeast - 2 tablespoons

Sugar - 1 tablespoon

Salt - 1 1/2 teaspoons

Warm water - 110 milliliters

All purpose flour - 470 grams

Wheat flour - 1 tablespoon

Olive oil - 50 milliliters

Warm water - 100 milliliters

(For Veggie Patty)

Carrot - 100 grams

Green peas - 100 grams

Onions - 100 grams

Green beans - 80 grams

Bell pepper - 100 grams

Green chili - 1 1/2 tablespoons

Garlic - 4 cloves

Flax seeds - 1 tablespoon

Sunflower seeds - 1 tablespoon

Boiled mashed potatoes - 350 grams

White sesame seeds - 2 teaspoons

Bread crumbs - 45 grams

Oats - 1 tablespoon

Corn starch - 1 tablespoon

Salt - 1 1/2 teaspoons

Sugar - 1/4 teaspoon

Black pepper powder - 1 teaspoon

Red chili - 1 teaspoon

Garam masala - 2 teaspoons

Dry mango powder - 1 teaspoon

Oil - for shallow frying

Maize flour - for dusting

(For Sauce)

Mayonnaise - 2 tablespoons

Red chilli sauce - 2 tablespoons

(For Assembling)

Lettuce - to taste

Tomato - to taste

Onions - to taste

Cucumber - to taste

Jalapeno - to taste

Black olives - to taste

Cheese slices - to taste

PREPARATION

(For Dough)

1. In a bowl, add 2 tablespoons dry yeast, 1 tablespoon sugar, 1 1/2 teaspoons salt, 110 milliliters warm water and mix it well.

2. Rest the mixture for 10 minutes.

3. In a mixing bowl, add 470 grams all purpose flour, 1 tablespoon wheat flour, 50 milliliters olive oil, prepared yeast mixture, 100 milliliters warm water and knead it into a

smooth soft dough.

4. Rest the dough for 2 - 3 hours.

(For Veggie Patty)

1. In a blender, add 100 grams carrot, 100 grams green peas, 100 grams onions, 80 grams green beans, 100 grams bell pepper, 1 1/2 tablespoons green chili, 4 cloves garlic, 1 tablespoon flax seeds, 1 tablespoon sunflower seeds and blend it well.

2. Transfer this mixture into a bowl, add 350 grams boiled mashed potatoes, 2 teaspoons white sesame seeds, 45 grams bread crumbs, 1 tablespoon oats, 1 tablespoon corn starch, 1 1/2 teaspoons salt, 1/4 teaspoon sugar, 1 teaspoon black pepper powder, 1 teaspoon red chili, 2 teaspoons garam masala, 1 teaspoon dry mango powder and mix all the ingredients well.

3. Take some mixture in your hand and shape it into a patty.

4. Heat some oil in a pan and shallow these till golden brown and crispy.

5. Drain it on an absorbent paper and keep aside.

(For Bread)

1. Place the dough on a board and dust it with maize flour.

2. Tuck the dough well and divide the dough into equal portions.

3. Roll them into cylindrical shapes.

4. If you see in subway they have baguette tray for making the dough rise in an specific direction. Since its not easily available.

5. Place them in a tray. (you can place aluminium foil rolls or parchment paper or cling wrap rolls). (See Video)

6. Rest them for 45 minutes.

7. Cut the bread to open it up.

8. Preheat the oven to 350°F/180°C. Bake for 30 minutes.

9. Remove it from oven and let it cool.

(For Sauce)

1. In a bow, add 2 tablespoons mayonnaise, 2 tablespoons red chilli sauce and mix it well.

(Assembling)

1. Cut it from the centre and spread the prepared sauce on it.

2. Place lettuce, tomato slices, onion slices, cucumber slices, jalapeños, black olives over it.

3. Put the prepared veggie patties on top of it.

4. Place some cheese slices on the other side of the bread.

5. Close the sandwich with the other half and press it lightly.

6. Cut it into half.

7. Serve immediately.
