INGREDIENTS
(For Dough)
All purpose flour - 160 grams
Whole wheat flour - 110 grams
Salt - 1/2 teaspoon
Oil - 2 teaspoons
Water - 250 milliliters

(For Stuffing)
Oil - 1 1/2 tablespoons
Garlic - 1 teaspoon
Mashed boiled potatoes - 400 grams
Salt - 1 teaspoon
Red chili - 3/4 teaspoon
Chaat masala - 1/2 teaspoon
Coriander - 15 grams

(For Filling)
Vinegar - 2 tablespoons
Green chili - 2 teaspoons
Ketchup - to taste
Shredded cabbage - to taste
Chaat masala - to taste

 

PREPARATION


(For Dough)
1. In a mixing bowl, add 160 grams all purpose flour, 110 grams whole wheat flour, 1/2 teaspoon salt, 2 teaspoons oil, 250 millilitres water and knead it into a smooth soft dough. Keep aside.

(For Stuffing)
1. Heat 1 1/2 tablespoons oil in a pan, add 1 teaspoon garlic and sauce till it turns browns. Add 400 grams boiled mashed potatoes, 1 teaspoon salt, 3/4 teaspoon red chili, 1/2 teaspoon chaat masala, 15 grams coriander and mix all the ingredients well. Cook for 3 - 5 minutes.
2. Transfer the mixture into a bowl, take some mixture in your hands and shape them into a cylindrical shape and keep aside.

(For Rotis)
1. Take the dough and divide into equal sized balls. Take a dough ball and apply some oil over them.Press it with your hands. Roll the dough ball into a round and thin roti.
2. Heat a Tava or skillet. Place the roti and cook until there are few bubbles on the surface. Flip it and apply some oil on it. Cook till side are brown.
3. Remove it from heat. Keep aside.

(Assembly)
1. In a bowl, add 2 tablespoons vinegar, 2 teaspoons green chili and mix well.
2. Apply some ketchup on the roti and then top with shredded cabbage. Place the cylindrical shape of potato mixture over it.
3. Put some vinegar and chili mixture over it.
4. Sprinkle some chaat masala.
5. Roll the frankies.
6. Serve.
