Oil - 50 milliliters
Okra - 500 grams
Ghee - 2 tablespoons
Cumin - 1 tablespoon
Cinnamon sticks - 2
Black cardamom - 4 pods
Black peppercorns - 8 - 10
Onions - 240 grams
Ginger paste - 1 teaspoon
Garlic paste - 1 teaspoon
Green chili - 3 - 4
Turmeric - 1/2 teaspoon
Coriander powder - 2 teaspoons
Tomato puree - 200 grams
Mutton - 600 grams
Water - 500 milliliters
Red chili - 1 teaspoon
Salt - 2 teaspoons
Garam masala - 1 teaspoon
Parsley - for garnishing
PREPARATION
1. Heat 50 milliliters oil in a pot, add 500 grams okra and roast till it turns dark brown in color.
2. Keep aside.
3. Heat 2 tablespoons ghee in a pressure cooker, add 1 tablespoon cumin, 2 cinnamon sticks, 4 pods black cardamom, 8 - 10 black peppercorns and stir well.
4. Add 240 grams onions and fry till translucent.
5. Then, add 1 teaspoon ginger paste, 1 teaspoon garlic paste and saute for 2 - 3 minutes.
6. Now, add 3 - 4 green chili and stir till it turns golden brown in color.
7. Add 1/2 teaspoon turmeric, 2 teaspoons coriander powder and stir well.
8. Then, add 200 grams tomato puree and saute for 5 - 7 minutes.
9. Now, add 600 grams mutton and mxi it well.
10. Add 500 milliliters water, 1 teaspoon red chili, 2 teaspoons salt and mix it well.
11. Add the roasted okra and mix it well.
12. Close the lid and cook till you hear 2 whistles.
13. Open the lid and mix it well.
14. Add 1 teaspoon garam masala and mix it well.
15. Cook for another 3 - 5 minutes.
16. Garnish with parsley.
17. Serve hot with rice.
