Cauliflower With Yogurt Gravy

INGREDIENTS

Warm water - 1 litre

Salt - 1 teaspoon

Cauliflower - 410 grams

Oil - 50 milliliters

Cumin - 1/2 teaspoon

Fenugreek seeds - 1/4 teaspoon

Mustard seeds - 1/4 teaspoon

Asafoetida - 1/8 teaspoon

Green chili - 1 teaspoon

Ginger - 1 tablespoon

Turmeric - 1/4 teaspoon

Gram flour - 2 tablespoons

Yogurt - 120 grams

Water - 440 milliliters

Red chili - 1/4 teaspoon

Sugar - 1/2 teaspoon

Salt - 1 teaspoon

Garam masala - 1/4 teaspoon

Coriander - for garnishing

PREPARATION

1. In a bowl, add 1 teaspoon salt, 410 grams cauliflowers and soak for 30 minutes. Drain and keep aside.

2. Heat 50 milliliters oil in a pot, add 1/2 teaspoon cumin, 1/4 teaspoon fenugreek seeds, 1/4 teaspoon mustard seeds, 1/8 teaspoon asafoetida, 1 teaspoon green chili, 1 tablespoon ginger and saute for 2 - 3 minutes.

3. Add 1/4 teaspoon turmeric and stir well.

4. Then, add 2 tablespoons gram flour and mix it well. Cook for 3 - 5 minutes.

5. Now, add 120 grams yogurt and mix it well.

6. Add the soaked cauliflower and mix it again.

7. Add 440 milliliters water, 1/4 teaspoon red chili, 1/2 teaspoon sugar, 1 teaspoon salt and mix it well.

8. Cover it with lid and cook for 15 - 20 minutes.

9. Now, add 1/4 teaspoon garam masala and mix it well.

10. Again cover it with lid and cook for 5 minutes.

11. Garnish with coriander.

12. Serve.
