Easy Pudina Rice (Easy Mint Rice)

INGREDIENTS
Mint - 20 grams
Coriander - 20 grams
Garlic - 1 1/2 tablespoons
Ginger - 1 teaspoon
Green chili - 3
Coconut - 2 tablespoons
Water - 80 milliliters
Ghee - 2 tablespoons
Cumin - 1 teaspoon
Black pepper - 1/2 teaspoon
Bay leaf - 1
Cloves - 6
Star anise - 2
Cinnamon stick - 1 inch
Cashews - 1 1/2 tablespoons
Onions - 40 grams
Tomato - 80 grams
Potatoes - 100 grams
Green beans - 20 grams
Green peas - 40 grams
Carrot - 50 grams
Rice - 200 grams
Water - 420 milliliters
Salt - 1 teaspoon

 

PREPARATION


1. Add 20 grams mint, 20 grams coriander, 1 1/2 tablespoons garlic, 1 teaspoon ginger, 3 green chili, 2 tablespoons coconut, 80 milliliters water in a blender and blend it into a smooth paste.
2. Heat 2 tablespoons ghee in a heavy skillet, add 1 teaspoon cumin, 1/2 teaspoon black pepper, 1 bay leaf, 6 cloves, 2 star anise, 1 inch cinnamon stick and stir.
3. Add 1 1/2 tablespoons cashews, , 40 grams onions and stir well.
4. Add 80 grams tomato and stir again.
5. Add 100 grams potatoes, 20 grams green beans, 40 grams green peas, 50 grams carrot and mix well.
6. Add the mint coriander paste in it and mix well.
7. Add 200 grams washed rice and mix well to combine.
8. Add 420 milliliters water and stir.
9. Add 1 teaspoon salt and stir again.
10. Close the lid and cook for about 15 - 20 minutes or until the rice are cooked.
11. Garnish with mint.
12. Serve.
