INGREDIENTS

Bitter gourd - 250 grams

Salt - 1 teaspoon

Water - 500 milliliters

Oil - 2 tablespoons

Cumin - 1/2 teaspoon

Asafoetida - 1/4 teaspoon

Turmeric - 1/2 teaspoon

Salt - 1 teaspoon

Coriander powder - 1 teaspoon

Red chili - 1 teaspoon

Milk - 300 milliliters

Fresh cream - 2 tablespoons

Garam masala - 1/2 teaspoon

Dry mango powder - 1/2 teaspoon

PREPARATION

1. In a bowl, add 250 grams bitter gourd, 1 teaspoon salt and mix it well.

2. Add 500 milliliters water and rest for 15 - 20 minutes.

3. Remove it from water and keep aside.

4. Heat 2 tablespoons oil in a pan, add 1/2 teaspoon cumin, 1/4 teaspoon asafoetida and stir well.

5. Add 1/2 teaspoon turmeric and stir again.

6. Now, add the bitter gourd and mix it well

7. Then, add 1 teaspoon salt and mix it again.

8. Cook for 3 - 5 minutes.

9. Add 1 teaspoon coriander powder, 1 teaspoon red chili and mix well.

10. Now, add 300 milliliters milk and mix again.

11. Bring it a boil on medium heat.

12. Then, add 2 tablespoons fresh cream and mxi it well.

13. Cook for another 2 - 3 minutes.

14. Add 1/2 teaspoon garam masala, 1/2 teaspoon dry mango powder and mix it well.

15. Serve hot with roti.
