Peanut Rice

Servings - 2 - 3

INGREDIENTS

Oil - 1 teaspoon

Peanuts - 2 tablespoons

Split mung beans - 1 teaspoon

Cumin - 1/2 teaspoon

Sesame seeds - 1 teaspoon

Dry red chili - 3

Desiccated coconut - 2 tablespoons

Oil - 2 tablespoons

Mustard seeds - 1 teaspoon

Curry leaves - 10 - 12

Peanuts - 2 tablespoons

Cooked rice - 300 grams

Salt - 1/2 teaspoon

PREPARATION

1. Heat 1 teaspoon oil in a pan, add 2 tablespoons peanuts, 1 teaspoon split mung beans, 1/2 teaspoon cumin, 1 teaspoon sesame seeds, 3 dry red chili, 2 tablespoons desiccated coconut and roast till it turns golden brown in color.

2. Transfer this into a blender and blend well.

3. Heat 2 tablespoons oil in a skillet, add 1 teaspoon mustard seeds, 10 - 12 curry leaves, 2 tablespoons peanuts and saute for 2 - 3 minutes.

4. Now, add 300 grams cooked rice and mix it well.

5. Then, add the blended mixture, 1/2 teaspoon salt and mix it well.

6. Cover it with lid and cook for 5 minutes.

7. Remove the lid and mxi it well.

8. Serve hot.
