Gajar Halwa Swiss Roll

INGREDIENTS
Ghee - 30 milliliters

Grated carrots - 400 grams

Milk - 200 milliliters

Sugar - 2 tablespoons

Almonds - 2 teaspoons

Raisins - 2 teaspoons

Ghee - 2 teaspoons

Khoa - 220 grams

Powdered sugar - 1 tablespoon

Milk - 45 milliliters

Cardamom powder - 1/4 teaspoon

 

PREPARATION

  1. Heat 30 milliliters ghee in a skillet, add 400 grams grated carrots and mix it well.
  2. Cover it with lid and cook for about 10 - 12 minutes on medium heat.
  3. Open the lid and give it a nice stir.
  4. Then, add 200 milliliters milk and mix it well.
  5. Cover it with lid and cook for about 15 minutes on medium heat.
  6. Open the lid and give it a nice stir.
  7. Add 2 tablespoons sugar and mix it well.
  8. Add 2 teaspoons almonds, 2 teaspoons raisins and mix it well.
  9. Cook for 5 - 7 minutes on medium heat.
  10. Remove it from heat and keep aside.
  11. Heat 2 teaspoons ghee in a pan, add 220 grams khoa and mix it well.
  12. Cook for 5 - 7 minutes on medium heat.
  13. Add 1 tablespoon powdered sugar, 45 milliliters milk and mix it well.
  14. Cook for 5 - 7 minutes on medium heat.
  15. Add 1/4 teaspoon cardamom powder and mix it well.
  16. Cook for another 3 - 5 minutes on medium heat.
  17. Remove it from heat and transfer this onto a butter paper.
  18. Cover it with another butter paper.
  19. Flatten it with the help of a rolling pin.
  20. Remove the butter paper and add the prepared gajar halwa and spread it evenly.
  21. Roll it carefully and place it on a cling wrap.
  22. Cover it with cling wrap and refrigerate for 1 hour.
  23. Cut it into pieces.
  24. Serve.
