INGREDIENTS


Kaju Jalebi

Servings - 3 - 4

INGREDIENTS
Cashews - 400 grams
Milk - 35 milliliters
Saffron - 1/4 teaspoon
Sugar - 300 grams
Water - 260 milliliters
Ghee - 10 milliliters
Cardamom powder - 1/4 teaspoon
Pistachios - to taste

PREPARATION


1. In a blender, add 400 grams cashews and blend it into a fine powder.
2. Take a bowl and place a stainer on it.
3. Add the blended cashew in it and strain the powder properly.
4. In a bowl, add 35 milliliters milk, 1/4 teaspoon saffron and mix it well.
5. Rest for 30 minutes.
6. Take a skillet, add 300 grams sugar, 260 milliliters water and stir continuously until the sugar is fully dissolved.
7. Bring it to a boil.
8. Then, add the blended mixture in it and mix it well.
9. Cook for 5 - 7 minutes on medium heat.
10. Add 10 milliliters ghee and mix it well.
11. Add 1/4 teaspoon cardamom powder and mix it well.
12. Cook for 5 - 7 minutes on medium heat or until the mixture thickens.
13. Remove it from heat and allow it to cool for about 5 minutes.
14. Transfer the mixture on to a board and spread it evenly.
15. Cut it into long strips.
16. Roll the strip into a cylindrical shape and then roll it inwards into a spiral shape. (See Video)
17. Brush it with saffron milk.
18. Add some pistachios on top of it.
19. Decorate with silver leaf.
20. Serve.

Badam Jalebi

Almonds - 150 grams
All purpose flour - 300 grams
Gram flour - 25 grams
Baking powder - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Cardamom powder - 1/4 teaspoon
Organic food color - 1/8 teaspoon
Curd - 100 grams
Water - 350 milliliters
Sugar - 300 grams
Water - 150 milliliters
Lemon juice - 1 teaspoon
Cardamom powder - 1/4 teaspoon
Saffron - 1 teaspoon
Oil - for frying
Pistachios - for garnishing
