Strawberry Coconut Macaroons

INGREDIENTS  

Egg white - 2  

Powdered sugar - 50 grams  

Vanilla extract - 1 teaspoon  

Desiccated Coconut - 50 grams  

Fresh Coconut - 150 grams  

Chopped Strawberry - 80 grams  

  

PREPARATION

  

  1. In a mixing bowl, add 2 egg whites and beat with electric mixer.  

  2. Now, add 50 grams powdered sugar and beat again.  

  3. Add 1 teaspoon vanilla extract and mix well.  

  4. Add 50 grams desiccated coconut, 150 grams fresh coconut and mix again.

  5. Refrigerate for 10 minutes.  

  6. Now, add 80 grams chopped straberries in the same bowl and mix well.

  7. Using a large cookie scoop, scoop out the mixture and place onto prepared baking sheet.  8. Bake at 335°F/170°C for 30-35 minutes.

  8. Serve.
