 Vegan Whole Wheat Maple Cinnamon Buns

INGREDIENTS

Dry yeast - 2 tablespoons

Sugar - 2 tablespoons

Warm almond milk - 250 milliliters

All purpose flour - 200 grams

Whole wheat flour - 200 grams

Salt - 1 teaspoon

Maple syrup - 2 tablespoons

Coconut oil - 60 milliliters

Vegan butter - 80 grams

Brown sugar - 55 grams

Maple syrup - 55 milliliters

Cinnamon - 1 tablespoon

Powder sugar - 150 grams

Maple syrup - 2 tablespoons

Almond milk - 2 tablespoons

PREPARATION

1. In a mixing bowl, add 2 tablespoons dry yeast, 2 tablespoons sugar, 250 milliliters warm almond milk and mix it well.

2. Rest the mixture for 10 minutes.

3. Add 200 grams all purpose flour, 200 grams whole wheat flour, 1 teaspoon salt, 2 tablespoons maple syrup, 60 milliliters coconut oil and knead it into a smooth soft dough.

4. Rest the dough for 2 hours.

5. In a bowl, add 80 grams vegan butter, 55 grams brown sugar and whisk it well.

6. Add 55 milliliters maple syrup, 1 tablespoon cinnamon and whisk it again.

7. Place the dough on the marble and dust it with flour.

8. Tuck the dough well.

9. Flatten it with the help of a rolling pin.

10. Spread the prepared filling on it.

11. Roll it into a cylindrical shape.

12. Cut it into slices.

13. Place the bun on a baking tray.

14. Cover it with cloth and rest the buns for 1 hour.

15. Preheat the oven to 350°F/180°C. Bake for 25 - 30 minutes.

16. Remove it from oven and v=brush it with maple syrup.

17. Cool them for 5 - 20 minutes.

18. In a bowl, add 150 grams powdered sugar, 2 tablespoons maple syrup, 2 tablespoons almond milk and mix it well.

19. Fill it into a piping bag.

20. Top with prepared maple syrup glaze.

21. Serve.
