Grilled Bao With Spicy Chilli Mushroom

INGREDIENTS

 

Dry yeast - 2 teaspoons

Sugar - 1 teaspoon

Warm milk - 80 milliliters

All purpose flour - 200 grams

Salt - 1/2 teaspoon

Warm milk - 70 milliliters

Oil - 1 teaspoon

All purpose flour - 50 grams

Corn flour - 45 grams

Ginger garlic paste - 1 teaspoon

Salt - 1/4 teaspoon

Black pepper powder - 1/4 teaspoon

Water - 200 milliliters

Mushroom - 180 grams

Oil - for frying

Oil - 2 tablespoons

Ginger -1 tablespoon

Garlic - 1 tablespoon

White spring onion - 1 tablespoon

Onion - 50 grams

Bell pepper - 150 grams

Soy sauce - 1 teaspoon

Vinegar - 1 teaspoon

Tomato ketchup - 1 tablespoon

Red chili sauce - 1 teaspoon

Schezwan sauce -1 tablespoon

Salt - 1/2 teaspoon

Black pepper - 1/2 teaspoon

Sugar - 1/2 teaspoon

Corn flour -  1 tablespoon

Water - 40 milliliters

Green spring onion - 1 teaspoon

All purpose flour - for dusting

Green spring onion - for garnish

 

 

PREPARATION

  1. In a bowl, add 2 teaspoons dry yeast, 1 teaspoon sugar and 80 milliliters milk.
  2. Mix well and let it rest for 5 minutes.
  3. Now, In the same, add 200 grams all purpose flour, 1/2 teaspoon salt and 70 milliliters warm milk
  4. Mix  and knead it to make a smooth soft dough.
  5. Apply 1 teaspoon oil on the prepared dough and let it rest for 2 - 3 hours .
  6. Now, In another bowl, add 50 grams all purpose flour, 45 grams corn flour, 1 teaspoon ginger garlic paste, 1/4 teaspoon salt, 1/4 teaspoon black pepper and 200 milliliters water.
  7. Mix it well .
  8. Now take 180 grams mushrooms, dip it in the prepared mixture.
  9. Heat sufficient oil in a skillet and deep fry the mushrooms until golden brown and crispy.
  10. Heat 2 tablespoons oil in a pan, add 1 tablespoon ginger, 1 tablespoon garlic stir well.
  11. Now, add 1 tablespoon white spring onion, 50 grams onion and cook until it turns translucent.
  12. Then, add 150 grams red, green and yellow bell pepper. Mix well.
  13. Add 1 teaspoon soy sauce, 1 teaspoon vinegar, 1 tablespoon tomato ketchup, 1 teaspoon red chili sauce, stir once , then add 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon sugar. Stir well.
  14. Cook it for 2 minutes on a low heat.
  15. In a bowl, add 1 tablespoon corn flour and 40 milliliters water .
  16. Mix well and pour this mixture in the pan.
  17. Now, add fried mushroom and stir well.
  18. Add 1 teaspoon green spring onion and mix well.
  19. Remove the pan from heat.
  20. Now, take a small portion from dough.
  21. Dust some flour to avoid it from sticking.
  22. Flatten it with the help of rolling pin.
  23. Now fold it to make a bao.
  24. Put it in a steamer and  steam for 15 - 20 minutes.
  25. Now , take out the steamed bay and place it in well greased grill pan.
  26. Brush some oil on both side and grill until golden brown in color.
  27. Allow it to cool.
  28. Open the bay and fill it with prepared mushroom mixture.
  29. Garnish it with green spring onions.
  30. Serve hot.
