Panner Stuffed Aloo Tikki

INGREDIENTS

Flattened rice - 60 grams

Water - 80 milliliters

Boiled potatoes - 500 grams

Corn starch - 2 tablespoons

Salt - 1/2 teaspoon

Green chili - 1 teaspoon

Ginger - 1 teaspoon

Oil - 15 milliliters

Cumin - 1/2 teaspoon

Fennel seeds - 1/2 teaspoon

Ginger - 1 1/2 teaspoons

Red chili - 1/2 teaspoon
Black salt - 1/2 teaspoon

Salt - 1/4 teaspoon

Garam masala - 1/2 teaspoon

Dry mango powder - 1/2 teaspoon

Chaat masala - 1/2 teaspoon

Raisins - 2 teaspoons

Grated paneer - 150 grams

Coriander - 2 tablespoons

Oil - for shallow frying

Coriander - 15 grams

Mint - 12 grams

Green chili - 1 tablespoon

Ginger - 1 tablespoon

Salt - 1/2 teaspoon

Chaat masala - 1/2 teaspoon

Cumin powder - 1/2 teaspoon

Sugar - 1 teaspoon

Lemon juice - 30 milliliters

Water - 50 milliliters

PREPARATION

1. In a bowl, add 60 grams flattened rice, 80 milliliters water and soak for 5 minutes.

2. In a mixing bowl, add 500 grams boiled potatoes and mash them with food masher.

3. Add soaked flattened rice, 2 tablespoons corn starch, 1/2 teaspoon salt, 1 teaspoon green chili, 1 teaspoon ginger and mix it well.

4. Heat 15 milliliters oil in a pan, add 1/2 teaspoon cumin, 1/2 teaspoon fennel seeds, 1 1/2 teaspoons ginger and saute for 1 - 2 minutes.

5. Add 1/2 teaspoon red chili, 1/2 teaspoon black salt, 1/4 teaspoon salt, 1/2 teaspoon garam masala, 1/2 teaspoon dry mango powder, 1/2 teaspoon chaat masala, 2 teaspoons raisins and mix it well.

6. Then, add 150 grams grated paneer and mix it well.

7. Cook for 5 - 7 minutes on medium heat.

8. Add 2 tablespoons coriander and mix it well.

9. Remove it from heat and keep aside.

10. Take some potato mixture in your hand and flatten it with help of your fingers.

11. Now, add a teaspoon of prepared paneer mixture on it.

12. Shape it into a tikki.

13. Heat sufficient oil in a pan and shallow fry these until it turns golden brown and crispy from both sides.

14. Drain it on an absorbent paper.

15. In a blender, add 15 grams coriander, 12 gram mint, 1 tablespoon green chili, 1 tablespoon ginger, 1/2 teaspoon salt, 1/2 teaspoon chaat masala, 1/2 teaspoon cumin powder, 1 teaspoon sugar, 30 milliliters lemon juice, 50 milliliters water and blend well.

16. Serve prepared tikki with green chutney.
