Aloo Spring Onion Ki Sabzi

INGREDIENTS

Potato - 500 grams

Salt - 1/2 teaspoon

Coriander seeds - 1/2 teaspoon

Black peppercorns - 1/2 teaspoon

Cumin - 1/2 teaspoon

Green cardamon - 2 pods

Cloves - 4 pods

Mustard oil - 20 milliliters

Caraway seeds - 1/2 teaspoon

Garlic - 1 teaspoon

White spring onion - 50 grams

Green chili - 1/2 teaspoon

Salt- 1/2 teaspoon

Turmeric - 1/2 teaspoon

Chilli flakes - 1 teaspoon

Water - 50 milliliters

Green spring onion - 75 grams

Prepared masala - to taste

 

 

PREPARATION

  1. Take 500 grams potatoes, cut it into small pieces with the help of sharp knife.
  2. In a bowl, add diced potatoes and 1/2 teaspoon salt.
  3. Mix well and keep aside.
  4. Heat a pan ,add 1/2 teaspoon coriander seeds, 1/2 teaspoon black peppercorns, 1/2 teaspoon cumin, 2 pods green cardamon, 4 pods cloves and dry roast for 2-3 minutes .
  5. Transfer the roasted spices in the grinder and grind into a fine powder.
  6. In a skillet, heat 20 milliliters oil, add 1/2 teaspoon caraway seeds, 1 teaspoon garlic and stir well.
  7. Now, add 50 grams white spring onions and sauté for 1-2 minutes.
  8. Then, add 1/2 green chili, stir once then add, 1/2 teaspoon turmeric, 1 teaspoon chilli flakes and mix well.
  9. Now add diced potatoes, mix and add 50 milliliters water.
  10. Cover and cook for 10 -12 minutes.
  11. Now, remove the lid, mix once and add 75 grams green spring onion. Stir well.
  12. Now, add some prepared masala and give it a nice mix.
  13. Serve hot.
