Raw Mango Stuffed Karela

Servings - 2 - 3

INGREDIENTS
Bitter gourd - 540 grams
Salt - 1/4 teaspoon
Salt - 1/2 teaspoon
Water - 950 milliliters, divided
Oil - 2 tablespoons
Cumin - 1 teaspoon
Nigella seeds - 1/4 teaspoon
Fennel seeds - 1 teaspoon
Asafoetida - 1/4 teaspoon
Ginger - 1/2 teaspoon
Garlic - 1/2 teaspoon
Green chili - 1 teaspoon
Onions - 185 grams
Turmeric - 1/4 teaspoon
Grated raw mangoes - 70 grams
Salt - 1/2 teaspoon
Red chili - 1/2 teaspoon
Coriander powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Sugar - 1 teaspoon
Water - 60 milliliters
Garam masala - 1/2 teaspoon
Oil - for shallow frying

PREPARATION


1. Take a bitter gourd and remove it’s skin.
2. Transfer this into a bowl, add 1/4 teaspoon salt and mix it well.
3. Rest for 15 - 20 minutes.
4. Take the peeled bitter gourd and make a cut it the center.
5. Remove the seeds from it.
6. Transfer this into a bowl, add 1/2 teaspoon salt and mix it well.
7. Rest for 15 - 20 minutes.
8. Take a bowl, place a cloth on it.
9. Add the peeled skin on it, add 200 milliliters water and squeeze it properly. Keep aside.
10. Take the peeled bitter gourd, add 750 milliliters water and wash it properly.
11. Heat 2 tablespoons oil in a pan, add 1 teaspoon cumin, 1/4 teaspoon nigella seeds, 1 teaspoon fennel seeds and stir well.
12. Add 1/4 teaspoon asafoetida, 1/2 teaspoon ginger, 1/2 teaspoon garlic, 1 teaspoon green chili and stir again or 2 - 3 minutes.
13. Then, add 185 grams onions and fry till translucent or until it turns golden brown in color.
14. Add 1/4 teaspoon turmeric and stir well.
15. Add the peeled bitter gourd skin in it and mix it well.
16. Cook for 5 - 7 minutes on medium heat.
17. Now, add 70 grams grated raw mangoes and mix it well.
18. Cook for another 5 - 7 minutes on medium heat.
19. Add 1/2 teaspoons alt, 1/2 teaspoon red chili, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1 teaspoon sugar and mix it well.
20. Add 60 milliliters water and mix it well.
21. Cook for 3 - 5 minutes on medium heat.
22. Add 1/2 teaspoon garam masala and mix it again.
23. Cook for another 3 - 5 minutes on medium heat.
24. Remove it from heat.
25. Take the peeled bitter gourd and fill it with prepared mixture.
26. Roll a thread on it.
27. Heat some oil in a pan, add the prepared bitter gourd on it.
28. Cover it with lid.
29. Cook for 7 - 8 minutes on medium heat.
30. Open the lid and flip it gently.
31. Again cover it with lid.
32. Cook for another 7 - 8 minutes on medium heat.
33. Shallow fry until it turns dark brown in color from all sides.
34. Remove it from heat.
35. Remove the thread.
