Ghee - 2 tablespoons
Edible gum crystals - 120 grams
Ghee - 1 tablespoon
Puffed lotus seeds - 60 grams
Ghee - 1 tablespoon
Cashews - 150 grams
Almonds - 250 grams
Pistachios - 90 grams
Dried melon seeds - 150 grams
Ghee - 1 tablespoon
Raisins - 85 grams
Ghee - 200 grams
Semolina - 500 grams
Shredded coconut - 100 grams
Cardamom powder - 1 teaspoon
Powdered sugar - 500 grams
PREPARATION
1. Heat 2 tablespoons ghee in a heavy skillet, add 120 grams edible gum crystals and fry until double in size.
2. Heat 1 tablespoon ghee in a heavy skillet, add 60 grams puffed lotus seeds and fry until light golden.
3. Heat 1 tablespoon ghee in a heavy skillet, add 150 grams cashews, 250 grams almonds, 90 grams pistachios, 150 grams dried melon seeds and fry for 3 - 5 minutes.
4. Heat 1 tablespoon ghee in a heavy skillet, add 85 grams raisins and fry until golden brown.
5. Heat 200 grams ghee in a heavy skillet, add 500 grams semolina and mix continuously until fragrant.
6. Add 100 grams shredded coconut, 1 teaspoon cardamom powder and mix continuously until golden brown.
7. In a chopper, add all the dry fruits and coarsely chop fried nuts and set aside.
8. In a mixing bowl, add semolina mixture, lotus seeds mixture, dry fruits mixture, 500 grams powdered sugar and mix until combined.
9. Serve or store in an air tight jar & use up till 2-3 months.
