Quick Indian Chicken Curry

INGREDIENTS
Chicken breast - 500 grams
Lemon juice - 2 tablespoons
Olive oil - 2 tablespoons, divided
Curry powder - 4 tablespoons, divided
Onions - 100 grams
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Tomato - 200 grams
Water - 120 mililitters
Salt - 1 1/2 teaspoons
Black pepper - 1/4 teaspoon
Coriander - for garnishing

 

PREPARATION


1. In a mixing bowl, add 500 grams chicken breast, 2 tablespoons lemon juice, 2 tablespoons olive oil, 2 tablespoons curry powder and mix well to combine.
2. Heat 1 tablespoon olive oil in a heavy skillet, add 100 grams onions, 1 tablespoon garlic, 1 tablespoon ginger and saute for 2 - 3 minutes
3. When the onions turns golden, add chicken mixture, 200 grams tomato, 2 tablespoons curry powder and stir well.
4. Bring it to boil and cook for 10 - 15 minutes.
5. Add 120 milliliters water, 1 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix well. Cook for 5 - 7 minutes.
6. Garnish with coriander.
7. Serve hot.
