Spicy Cashew Chicken

INGREDIENTS

(For Chicken Marination)

Boneless chicken - 700 grams

Kosher salt - 1/4 teaspoon

Black pepper - 1/8 teaspoon

Paprika - 1/8 teaspoon

(For Spicy Soy Sherry Sauce)

Hoisin sauce - 250 grams

Soy sauce - 80 grams

Sherry wine - 60 milliliters

Red wine vinegar - 2 tablespoons

Sriracha sauce - 1 tablespoon

Powdered sugar - 65 grams

Garlic - 45 grams

Chilli flakes - 1/4 teaspoon

(Rest of the Ingredients)

Rice flour - 135 grams

All purpose flour - 35 grams

Kosher salt - 1/4 teaspoon

Black pepper - 1/4 teaspoon

Water - 330 milliliters

Rice flour - 135 grams

Baking powder - 1/8 teaspoon

Oil - 80 milliliters

Green onions - 195 grams

Cashews - 230 grams

Sesame seeds - for garnishing

Green onions - for garnishing

PREPARATION

(For Chicken Marination)

1. In a mixing bowl, add 700 grams boneless chicken, 1/4 teaspoon kosher salt, 1/8 teaspoon black pepper, 1/8 teaspoon paprika and mix it well.

2. Marinate the chicken for 30 minutes.

(For Spicy Soy Sherry Sauce)

1. In a another mixing bowl, add all the spicy soy sherry ingredients and mix it well. Keep aside.

(Rest of the Preparation)

1. In a bowl, add 135 grams rice flour, 35 grams all purpose flour, 1/4 teaspoon kosher salt, 1/4 teaspoon black pepper, 330 milliliters water and mix it well to make a thick batter.

2. In a another bowl, add 135 grams rice flour, 1/8 teaspoon baking powder and mix it well.

3. Take the marinated chicken piece, roll it in rice flour mixture and then dip it in rice flour and all purpose flour mixture.

4. Heat 80 milliliters oil in a heavy pot, add the dipped pieces in it and cook till it turns golden brown from both sides and the chicken is cooked through.

5. Now, add 195 grams green onions, 230 grams cashews and mix it well.

6. Then, add the prepared sauce in it and mix it well.

7. Cook for 7 - 10 minutes and turn off the heat.

8. Garnish with sesame seeds and green onions.

9. Serve hot with rice.
