Grilled Hot & Sweet Paneer

INGREDIENTS

Oil - 1 tablespoon

Onions - 50 grams

Black pepper - 1/4 teaspoon

Sugar - 1 teaspoon

Chilli flakes - 1/2 teaspoon

Worcestershire sauce - 1 tablespoon

Milk - 2 tablespoons

Lemon juice - 1 teaspoon

Tabasco sauce - 1 teaspoon

Ketchup - 60 grams

Corn flour - 1 tablespoon

Water - 30 milliliters

Vinegar - 1 teaspoon

Paneer - 560 grams

Oil - 1 tablespoon

Spring onions - 50 grams

Red chilli sauce - 2 tablespoons

Prepared barbecue sauce - 50 grams

Salt - 1/2 teaspoon

Lemon juice - 1 tablespoon

Garlic - 1 tablespoon

Lemon zest - 1/4 teaspoon

Coriander - 2 tablespoons

Powdered sugar - 1 tablespoon

Oil - for brushing

PREPARATION

1. Heat 1 tablespoon oil in a deep pan, add 50 grams onions and fry till translucent.

2. Add 1/2 teaspoon black pepper, 1 teaspoon sugar, 1/2 teaspoon chilli flakes, 1 tablespoon worcestershire sauce and mix it well.

3. Then, add 2 tablespoons milk, 1 teaspoon lemon juice, 1 teaspoon tabasco sauce and mix it again.

4. Add 60 grams ketchup and mix it well.

5. Bring it to a boil.

6. In a bowl, add 1 tablespoon corn flour, 30 milliliters water and mix it well.

7. Pour this mixture into the pan and mix it well.

8. Bring it to a boil.

9. Now, add 1 teaspoon vinegar and stir well.

10. Cook for 3 - 5 minutes on medium heat.

11. Remove it from heat.

12. Transfer this into a blender and blend it into a smooth paste.

13. Take 560 grams paneer and cut it into medium size cubes.

14. In a mixing bowl, add 1 tablespoon oil, 50 grams spring onions, 2 tablespoon red chilli sauce, 50 grams prepared barbecue sauce, 1/2 teaspoon salt, 1 tablespoon lemon juice, 1 tablespoon garlic, 1/4 teaspoon lemon zest, 2 tablespoons coriander, 1 tablespoon powdered sugar and mix it well.

15. Add 560 grams paneer and mix it well.

16. Marinate for 15 minutes.

17. Soak skewers in water for 30 minutes.

18. Skewer the paneer.

19. Take a grill pan and brush it with oil.

20. Place the paneer skewers on it.

21. Cook until it turns golden brown in color from all sides.

22. Remove it from pan.

23. Garnish with spring onions.

24. Serve hot with ketchup.
