INGREDIENTS

Cucumber - 350 grams

Salt - 1 teaspoon

Roasted peanuts - 40 grams

Grated coconut - 40 grams

Green chili - 1/2 teaspoon

Sugar - 1 teaspoon

Lemon juice - 1 teaspoon

Coriander - 1 1/2 tablespoons

(For Tempering)

Oil - 1 tablespoon

Mustard seeds - 1/2 teaspoon

Curry leave - 7 - 8

PREPARATION

1. In a mixing bowl, add 350 grams cucumber, 1 teaspoon salt and mix it well.

2. Rest the cucumber for 10 - 15 minutes.

3. Add 40 grams roasted peanuts, 40 grams grated coconut, 1/2 teaspoon green chili, 1 teaspoon sugar, 1 teaspoon lemon juice, 1 1/2 tablespoons coriander and mix it well.

4. Heat 1 tablespoon oil in a pan, add 1/2 teaspoon mustard seeds, 7 - 8 curry leaves and stir well.

5. Pour this tempering over the cucumber mixture.

6. Serve.
