Mini Vada Pav Bites
Servings - 3 - 4

 

INGREDIENTS
(For The Potato Mixture)
Oil -1 tablespoon
Cumin seeds - 1 teaspoon
Chopped garlic - 1 tablespoon
Chopped ginger - 1 teaspoon
Cumin powder -1/2 teaspoon
Coriander Powder - 1/2 teaspoon
Red chili powder - 1 teaspoon
Turmeric - 1/2 teaspoon
Salt -1/2 teaspoon
Boiled mashed potatoes - 300 grams
Lemon juice -1 tablespoon
Coriander - 1 tablespoon

 

(For Making The Fritters)

Gram flour - 80 grams
Salt - 1/4 teaspoon
Red chili powder -1 teaspoon
Water - 280 mililitters
Bread slices

 

(Assembling The Vada Pav Bites)
Tamarind sauce - to taste
Green chutney - to taste
Garlic chutney - to taste

 

PREPARATION


(For The Potato Mixture)
1. Heat 1 tablespoon oil in pan, dd 1 teaspoon cumin seeds, 1 tablespoon chopped garlic and 1 teaspoon chopped ginger and saute until it turns golden brown.
2. Add 1/2 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1 teaspoon red chili powder, 1/2 teaspoon turmeric,1/2 teaspoon salt and 300 grams boiled mashed potatoes. Mix all the ingredients well.
3. Add 1 tablespoon lemon juice and 1 tablespoon coriander and mix well.

 

(For Making The Fritters)
1. In a mixing bowl, add 80 grams gram flour,1/4 teaspoon salt, 1 teaspoon red chili powder and mix well. Add 280 milliliters water and mix well to make a batter.
2. Divide the potato mixture into 10-12 equal portions and shape them into pin pong sized balls.
3. Coat each ball with the batter.
4. Heat sufficient oil in a heavy skillet. Deep fry these till they are golden brown and crisp. Drain it on an absorbent paper.
5. For the bread baskets, cut the bread into a circular shape.
6. Place the rolled out bread discs in the baking tray.
7. Preheat the oven to 350°F/180°C. Bake for 7 - 10 minutes.
8. Once done, set aside and cool the baskets for 5 minutes.

(Assembling The Vada Pav Bites)
1. Place a little bit of tamarind sauce in the basket, place the potato fritter on it.
2. Now, pipe some green chutney on top and sprinkle some peanut chutney.
3. Serve hot.
