Green Onion Paratha

Servings - 3 - 4

INGREDIENTS

All purpose flour - 280 grams

Salt - 3/4 teaspoon

Sugar - 1 teaspoon

Hot water - 80 milliliters

Cold water - 70 milliliters

Oil

Green onions - to taste

Oil - for brushing

PREPARATION

1. In a mixing bowl, add 280 grams all purpose flour, 3/4 teaspoon salt, 1 teaspoon sugar, 80 milliliters hot water and mix well.

2. Now, add 70 milliliters cold water and knead it into a smooth soft dough.

3. Rest the dough for 20 minutes.

4. Divide the dough into equal portions and roll them into balls.

5. Dust with a little dry flour and roll into roti.

6. Apply some oil over it.

7. Sprinkle green onions on top of it.

8. Starting from the long end, roll the dough up tightly, creating one long snake of rolled-up dough.

9. Press this and roll it into a paratha.

10. Heat some oil on a skillet, place paratha on it and cook on moderate heat for three minutes. Turn it and pour oil over it, spread it on paratha and shallow fry over low heat.

11. Turn it and again pour oil on other side. Cook on low heat till golden brown.

12. Garnish with green onions.

13. Serve hot.
