Kaddu Ki Sabzi

Servings - 2 - 3

INGREDIENTS

Oil - 50 milliliters

Cumin - 1 teaspoon

Fenugreek seeds - 1/2 teaspoon

Dry red chili - 4

Asafoetida - 1/4 teaspoon

Ginger paste - 1 tablespoon

Turmeric - 1/2 teaspoon

Squash - 425 grams

Fennel seeds - 1 tablespoon

Coriander powder - 1 tablespoon

Red chili - 1 teaspoon

Paprika - 1/2 teaspoon

Salt - 1 1/2 teaspoons

Water - 45 milliliters

Jaggery - 2 tablespoons

Dry mango powder - 1 tablespoon

Garam masala - 1/2 teaspoon

Lemon juice - 1 tablespoon

Coriander - for garnishing

PREPARATION

1. Heat 50 milliliters oil in a pot, add 1 teaspoon cumin, 1/2 teaspoon fenugreek seeds, 4 dry red chili, 1/4 teaspoon asafoetida, 1 tablespoon ginger paste and saute for 2 - 3 minutes.

2. Add 1/2 teaspoon turmeric and stir well.

3. Then, add 425 grams squash and mix it well.

4. Now, add 1 tablespoon fennel seeds, 1 tablespoon coriander powder, 1 teaspoon red chili, 1/2 teaspoon paprika, 1 1/2 teaspoons salt and mix it well.

5. Add 45 milliliters water and mix it well.

6. Cover it with a lid and cook for 5 minutes.

7. Open the lid and add 2 tablespoons jaggery and mix it well until it dissolved completely.

8. Again cover it with and cook for 10 - 12 minutes.

9. Now, add 1 tablespoon dry mango powder, 1/2 teaspoon garam masala, 1 tablespoon lemon juice and mix it well.

10. Garnish with coriander.

11. Serve hot with roti.
