Badam Jalebi

INGREDIENTS
Almonds - 150 grams

All purpose flour - 300 grams

Gram flour - 25 grams

Baking powder - 1/2 teaspoon

Baking soda - 1/4 teaspoon

Cardamom powder - 1/4 teaspoon

Organic food color - 1/8 teaspoon

Curd - 100 grams

Water - 350 milliliters

Sugar - 300 grams

Water - 150 milliliters

Lemon juice - 1 teaspoon

Cardamom powder - 1/4 teaspoon

Saffron - 1 teaspoon

Oil - for frying

Pistachios - for garnishing

 

PREPARATION

  1. In a blender, add 150 grams almonds and blend it into a fine powder.
  2. In a mixing bowl, add 300 grams all purpose flour, 25 grams gram flour, blended almonds, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon cardamom powder, 1/8 teaspoon organic food color, 100 grams curd and mix it well.
  3. Add 350 milliliters water and mix it well to make a thick batter.
  4. Rest the batter for 6 - 8 hours.
  5. Take a pan, add 300 grams sugar, 150 milliliters water and stir continuously until the sugar is fully dissolved.
  6. Add 1 teaspoon lemon juice, 1/4 teaspoon cardamom powder, 1 teaspoon saffron and mix it well.
  7. Bring it to a boil.
  8. Remove it from heat and keep aside.
  9. Take a piping bag and fill it with the prepared batter.
  10. Heat sufficient oil in a skillet and squeeze the piping bag over the ghee to make a concentric circles.
  11. Fry until it turns golden brown and crispy.
  12. Add the fried jalebi into the prepared sugar syrup.
  13. Soak for 5 minutes.
  14. Garnish with pistachios.
  15. Serve.
