Chicken Keema Bao

INGREDIENTS
Dry yeast - 2 teaspoons

Sugar - 1 1/2 teaspoons

Warm milk - 80 milliliters

All purpose flour - 200 grams

Salt - 1/2 teaspoon

Warm milk - 70 milliliters

Oil - 1 1/2 teaspoons

Oil - 2 teaspoons

Chicken keema - 350 grams

Salt - 1 teaspoon

Black pepper powder - 1/4 teaspoon

Oil - 2 teaspoons

Onions - 80 grams

Bell pepper - 65 grams

Tomato - 70 grams

Turmeric - 1/4 teaspoon

Red chili - 1/2 teaspoon

Paprika - 1 teaspoon

Salt - 1/4 teaspoon

Chicken masala - 1 teaspoon

Ketchup - 2 tablespoons

Soy sauce - 1 teaspoon

Spring onions - 1 tablespoon

 

PREPARATION

  1. In a mixing bowl, add 2 teaspoons dry yeast, 1 1/2 teaspoons sugar, 80 milliliters warm milk and mix it well.
  2. Rest the mixture for 10 - 15 minutes.
  3. Add 200 grams all purpose flour, 1/2 teaspoon salt, 70 milliliters warm milk and knead it into a smooth soft dough.
  4. Add 1 1/2 teaspoons oil and tuck he dough well.
  5. Rest the dough for 4 - 5 hours.
  6. Take a ball from dough and flatten it with the help of your fingers.
  7. Fold it into half and place it in a steamer.
  8. Steam for about 15 - 20 minutes.
  9. Open the lid and remove it from steamer. Cool for about 5 minutes.
  10. Heat 2 teaspoons oil in a pan, add 350 grams chicken keema and mix it well.
  11. Cook for 5 - 7 minutes on medium heat.
  12. Add 1 teaspoon salt, 1/4 teaspoon black pepper powder and mix it well.
  13. Cook for another 3 - 5 minutes on medium heat.
  14. Remove it from heat and keep aside.
  15. Heat 2 teaspoons oil in a skillet, add 80 grams onions and fry till translucent.
  16. Then, add 65 grams bell pepper and mix it well.
  17. Add 70 grams tomato and mix it well.
  18. Cover it with lid cook for 5 - 7 minutes on medium heat.
  19. Open the lid and give it a nice stir.
  20. Add 1/4 teaspoon turmeric and stir well.
  21. Add 11/2 teaspoon red chili, 1 teaspoon paprika, 1/4 teaspoon salt and mix it well.
  22. Now, add the cooked chicken keema and mix it well.
  23. Cook for 5 - 7 minutes on medium heat.
  24. Add 1 teaspoon chicken masala and mix it well.
  25. Cover it with lid and cook for about 5 - 7 minutes on medium heat.
  26. Open the lid and give it a nice stir.
  27. Add 2 tablespoons ketchup, 1 teaspoon soy sauce and mix it well.
  28. Add 1 tablespoon spring onions and mix it well.
  29. Cook for another 3 - 5 minutes on medium heat.
  30. Remove it from heat.
  31. Take the prepared bun and fill it with the prepared chicken mixture.
  32. Garnish with some spring onions.
  33. Serve hot.
