 Healthy Chicken Vegetable Rice

Servings - 2 - 3

INGREDIENTS

Rice - 200 grams
Water - 2.5 litres, divided
Salt - 1/2 teaspoon
Oil - 1 teaspoon
Olive oil - 2 tablespoons
Boneless chicken - 450 grams
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Bell pepper - 100 grams
Green peas - 50 grams
Carrots - 50 grams
Green spring onions - 1 tablespoon

PREPARATION


1. In a bowl, add 200 grams rice, 500 milliliters water and wash it properly.
2. Strain the rice properly and transfer this into a bowl, add 500 milliliters water and soak for 30 minutes.
3. Take a heavy skillet, add 1.5 litres water, 1/2 teaspoon salt, 1 teaspoon oil, soaked rice and mix it well.
4. Bring it to a boil.
5. Boil for 15 - 20 minutes on medium heat.
6. Remove it from heat and drain the rice.
7. Heat 2 tablespoons olive oil in a heavy skillet, add 450 grams boneless chicken and mix it well.
8. Cook for 5 - 7 minutes on medium heat.
9. Add 1 teaspoon salt, 1/2 teaspoon black pepper and mix it well.
10. Cover it with lid and cook for about 10 - 15 minutes on medium heat.
11. Open the lid and give it a nice stir.
12. Then, add 100 grams bell pepper, 50 grams green peas, 50 grams carrots and mix it well.
13. Again cover it with lid and cook for about 10 minutes on medium heat.
14. Open the lid and give it a nice stir.
15. Add the boiled rice and mix it well.
16. Add 1 tablespoon green spring onions and mix it well.
17. Cook for 3 - 5 minutes on medium heat.
18. Remove it from heat.
19. Garnish with green spring onions.
20. Serve.
