Pad Thai Noodles

Servings - 2 - 3

INGREDIENTS
Cold water - 1.8 litres
Flat rice noodles - 170 grams

(For Grilled Chicken)
Chicken breast - 300 grams
Salt - to taste
Black pepper - to taste
Oil - for grilling

(For Pad Thai Sauce)
Vinegar - 2 tablespoons
Fish sauce - 3 tablespoons
Sriracha hot sauce - 2 tablespoons
Soy sauce - 2 tablespoons
Peanut butter - 30 grams
Powdered brown sugar - 60 grams

(For Pad Thai Noodles)
Oil - 30 milliliters
Prawns - 170 grams
Garlic - 1 tablespoon
Onions - 130 grams
Bell pepper - 170 grams
Eggs - 2
Lemon juice - 1 tablespoon
Roasted peanuts - 40 grams
Salt - 1/2 teaspoon
Coriander - 1 tablespoon

PREPARATION


1. In a bowl, add 1.8 litres water, 170 grams flat rice noodles and soak for 8 - 10 minutes.

(For Grilled Chicken)
1. Take a chicken breast, sprinkle some salt and black pepper on it.
2. Heat some oil in a grill pan and place the chicken breast on it.
3. Cook until it turns golden brown in color from both sides or the chicken is fully cooked.
4. Remove it from grill pan and cut it into small pieces.
5. Keep aside.

(For Pad Thai Sauce)
1. In a mixing bowl, add all the ingredients and mix it well.
2. Keep aside.

(For Pad Thai Noodles)
1. Heat 30 milliliters oil in a heavy skillet, add 170 grams prawns, 1 tablespoon garlic and stir well.
2. Then, add 120 grams onions, 170 grams bell pepper and mix it well.
3. Cook for 8 - 10 minutes on medium heat.
4. Add 2 eggs and mix it well.
5. Cook for 5 - 7 minutes on medium heat.
6. Then, add the soaked flat rice noodles, prepared pad Thai sauce, grilled chicken, 1 tablespoon lemon juice, 40 grams roasted peanuts, 1/2 teaspoon salt and mix it well.
7. Cook for another 5 - 7 minutes on medium heat.
8. Add 1 tablespoon coriander and mix it well.
9. Remove it from heat.
10. Garnish with coriander.
11. Serve hot.
