 Achari Burger

INGREDIENTS

Kashmiri dry red chili - 10
Coriander seeds - 1 tablespoon
Onion seeds - 1 teaspoon
Fennel seeds - 35 grams
Mustard seeds - 2 tablespoons
Fenugreek seeds - 1/2 teaspoon
Cumin - 2 tablespoons
Salt - 2 teaspoons
Turmeric - 1/2 teaspoon
Asafoetida - 1/2 teaspoon
Dry mango powder - 2 teaspoons
Boiled mashed potatoes - 350 grams
Boiled green peas - 40 grams
Carrots - 40 grams
Green chili - 2 tablespoons
Chilli flakes - 1 teaspoon
Cumin powder - 1 teaspoon
Prepared achari masala - 2 teaspoons
Carom seeds - 1 teaspoon
Dry mango powder - 1/2 teaspoon
Bread crumbs - 40 grams
Corn flour - 1 teaspoon
Salt - 1 1/2 teaspoons
Chaat masala - 1 teaspoon
Oil - for shallow frying
Hung curd - 35 grams
Prepared achari masala - 1 1/2 teaspoons
Fresh cream - 30 grams
Paprika - 1/2 teaspoon
Salt - 1/2 teaspoon
Ketchup - 20 grams
Burger buns
Mayonnaise - to taste
Lettuce - to taste
Onion slices - to taste
Cheese slices - to taste
Tomato slices - to taste

PREPARATION


1. Take a pan, add 10 kashmiri dry red chili, 1 tablespoon coriander seeds, 1 teaspoon onion seeds, 35 grams fennel seeds, 2 tablespoons mustard seeds, 1/2 teaspoon fenugreek seeds, 2 tablespoons cumin and dry roast for 2 - 3 minutes.
2. Add 2 teaspoons salt, 1/2 teaspoon turmeric, 1/2 teaspoon asafoetida, 2 teaspoons dry mango powder and roast for 3 - 5 minutes on medium heat or until it turns golden brown in color.
3. Remove it from heat and transfer this into a blender.
4. Blend it into a fine powder. Keep aside.
5. In a mixing bowl, add 350 grams boiled mashed potatoes, 40 grams boiled green peas, 40 grams carrots, 2 tablespoons green chili, 1 teaspoon chilli flakes, 1 teaspoon cumin powder, 2 teaspoons prepared achari masala, 1 teaspoon carom seeds, 1/2 teaspoon dry mango powder, 40 grams bread crumbs, 1 teaspoon corn flour, 1 1/2 teaspoons salt, 1 teaspoon chaat masala and mix it well.
6. Take some mixture in your hands and shape it into a tikki.
7. Heat some oil in a pan, add the prepared tikki in it.
8. Cook on moderate heat for 2 - 3 minutes and flip it gently.
9. Cook until it turns golden brown in color from all sides.
10. Remove it from heat and drain it on an absorbent paper. Keep aside.
11. In a mixing bowl, add 35 grams hung curd, 1 1/2 teaspoons prepared achari masala, 30 grams fresh cream, 1/2 teaspoon paprika, 1/2 teaspoon salt, 20 grams ketchup and mix it well.
12. Take a burger bun, add some mayonnaise on it and spread it evenly.
13. Place a lettuce, onion slice, prepared tikki, cheese slice and tomato slice on it.
14. Add some prepared achari sauce on it.
15. Place the burger bun on top of it.
16. Prick a toothpick in it.
17. Serve.
