Achari Rajma Roll

INGREDIENTS

Red kidney beans - 130 grams

Water - 500 milliliters

Wheat flour - 150 grams

Salt - 1/2 teaspoon

Oil - 2 teaspoons

Water - 950 milliliters ( divided )

Salt - 1 teaspoon

Oil - 1 tablespoon

Ginger - 2 teaspoons

Garlic - 2 teaspoons

Onion - 60 grams

Tomato - 120 grams

Turmeric - 1/4 teaspoon

Salt - 1/4 teaspoon

Red chili - 1/2 teaspoon

Coriander powder - 1/2 teaspoon

Mango pickle masala - 2 tablespoons

Coriander - 1 tablespoon

Mayonnaise - 40 grams

Mango pickle masala - 1 tablespoon

Wheat flour - for dusting

Lettuce

Aluminium food wrap

 

PREPARATION

  1. In a mixing bowl, add 130 grams red kidney beans and 150 milliliters water.
  2. Soak for at least 8 hours .
  3. In a mixing bowl, add 150 grams wheat flour, 1/2 teaspoon salt, 2 teaspoon oil, and 100 milliliters water.
  4. Knead it to make a smooth dough.
  5. Rest the dough for 25 - 30 minutes.
  6. In a pressure cooker add soaked kidney beans/ rajma , 850 milliliters water, 1 teaspoon salt and give it a stir.
  7. Cover it with a lid and pressure cook until 4-5  whistles.
  8. Let the pressure release by itself and open the lid.
  9. Remove the pan from heat.
  10. Now, heat 1 tablespoon oil in a pan add 2 teaspoon ginger, 2 teaspoon garlic and sauté for 30 seconds.
  11. Add 60 grams onion and sauté until translucent.
  12. Now add 120 grams tomatoes, mix once and cook for 4-5 minutes.
  13. Then add 1/4 teaspoon turmeric and mix well.
  14. Now add 1/4 teaspoon salt , 1/2 teaspoon red chili and 1/2 teaspoon coriander powder. Stir well.
  15. Now add boiled red kidney beans and mix well.
  16. Add 2 tablespoons mango pickle masala and mix.
  17. Add 1 tablespoon coriander and stir well.
  18. Cook for 2-3 minutes on the medium heat.
  19. Now, remove the pan from heat.
  20. In a mixing bowl, add 40 grams mayonnaise, 1 tablespoon mango pickle masala, and mix well. Keep aside.
  21. Take a small ball from dough and dust some wheat flour yo avoid it from sticking.
  22. Now, flatten it with a help of rolling pin to make a chapatti.
  23. Place it on a heated tawa and cook from both side.
  24. Remove it from heat and transfer it on a flat surface.
  25. Now, apply prepared mayonnaise sauce evenly.
  26. Add some lettuce and  prepared rajma mixture on it.
  27. Top it with some onions and roll it tight using a aluminium wrap.
  28. Serve hot.
