INGREDIENTS
(For Dough)
Wheat flour - 250 grams
All purpose flour - 100 grams
Salt - 1/4 teaspoon
Oil - 1 tablespoon
Warm water - 300 milliliters
(For Masala)
Salt - 1 teaspoon
Turmeric - 1/2 teaspoon
Red chili - 1 teaspoon
Dry mango powder - 1 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Garam masala - 1 teaspoon
Black pepper - 1/4 teaspoon
(For Aloo Tikki)
Butter - 2 tablespoons
Ginger - 1 1/2 tablespoons
Green chili - 2 teaspoons
Boiled mashed potatoes - 350 grams
Lemon juice - 1 tablespoon
Coriander - 2 tablespoons
Washed flattened rice - 30 grams
Corn flour - 80 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Water - 100 milliliters
Bread crumbs - for coating
Oil - for frying
(For Assembling)
Mayonnaise - to taste
Lettuce - to taste
Tomato slices - to taste
Cheese slices - to taste
Butter - for shallow frying
PREPARATION
(For Dough)
1. In a mixing bowl, add 250 grams wheat flour, 100 grams all purpose flour, 1/4 teaspoon salt, 1 tablespoon oil and mix it well.
2. Add 300 milliliters warm water and knead it into a smooth soft dough.
3. Rest the dough for 10 minutes.
(For Masala)
1. In a bowl, add all the ingredients and mix it well.
2. Keep aside.
(For Aloo Tikki)
1. Heat 2 tablespoons butter in a skillet, add 1 1/2 tablespoons ginger, 2 teaspoons green chili and stir for a minute.
2. Then, add 350 grams boiled mashed potatoes and mix it well.
3. Cook for 5 - 7 minutes on medium heat.
4. Add 1 tablespoon lemon juice, 2 tablespoons coriander, 30 grams washed flattened rice and mix it well.
5. Add the prepared masala and mix it well.
6. Cook for another 3 - 5 minutes on medium heat.
7. Remove it from heat and transfer this into a bowl.
8. Take some mixture in your hands and shape it into a tikki.
9. Place it on a plate and refrigerate for 10 minutes.
10. In a mixing bowl, add 80 grams corn flour, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
11. Add 100 milliliters water and mix it well to make a thick batter.
12. Dip the prepared tikki in it and then roll it in bread crumbs properly.
13. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
14. Drain it on an absorbent paper and keep aside.
(For Aloo Tikki Wrap)
1. Take a ball from dough and flatten it with the help of a rolling pin.
2. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
3. Flip it gently.
4. Cook until it turns golden brown in color from both sides.
5. Place the tortilla on a board.
6. Make a cut outwards to the edge of the tortilla.
7. Place the tiki on it and mash the tikki with the help of a spoon.
8. Add some mayonnaise on it and spread it evenly.
9. On the other side add some lettuce and tomato slices on it.
10. In the end place the cheese slice on it.
11. Now, start by folding the wrap from the left side of your cut and flip and flip again until you have a completely folded tortilla.
12. Heat some butter on a pan, add the prepared wrap on it and cook until it turns dark brown in color from both sides.
13. Remove it from heat and cut it into half.
14. Serve.
