Besan French Fries

INGREDIENTS
Gram flour - 200 grams

Salt - 1/2 teaspoon

Red chili - 1/4 teaspoon

Turmeric - 1/4 teaspoon

Water - 180 milliliters

Oil - 1 tablespoon

Oil - 1 1/2 tablespoons

Mustard seeds - 1/2 teaspoon

Ginger - 2 teaspoons

Green chili - 2 teaspoons

Curry leaves - 1 tablespoon

Water - 1 tablespoon

Ketchup - 80 grams

Water - 1 tablespoon

Oil - 1 tablespoon

Oil - for brushing & frying

 

PREPARATION

  1. In a mixing bowl, add 200 grams gram flour, 1/2 teaspoon salt, 1/4 teaspoon red chili, 1/4 teaspoon turmeric, 180 milliliters water and mix it well.
  2. Add 1 tablespoon oil and mix it well.
  3. Rest the batter for 30 minutes.
  4. Heat 1 1/2 tablespoons oil in a pan, add 1/2 teaspoon mustard seeds and stir well.
  5. Add 2 teaspoons ginger, 2 teaspoons green chili, 1 tablespoon curry leaves and stir for 1 - 2 minutes.
  6. Add 1 tablespoon water and stir well.
  7. Then, add 80 grams ketchup and mix it well.
  8. Add 1 tablespoon water and mix it again.
  9. Cook for 3 - 5 minutes on medium heat.
  10. Remove it from heat and allow it to cool for about 15 minutes.
  11. Heat some oil on a tawa, add the prepared batter on it and spread it evenly.
  12. Cook for 2 - 3 minutes on medium heat and flip it gently.
  13. Cook for another 2 - 3 minutes.
  14. Remove it from heat and place it on a board.
  15. Cut it into french fries shape.
  16. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
  17. Drain it on an absorbent paper.
  18. Serve hot with prepared sauce.
