Maggi Vada Pav


Servings - 2 - 3


INGREDIENTS

(For Garlic Chutney)
Oil - 1 tablespoon
Garlic cloves - 8
Coconut - 30 grams
Salt - 1/2 teaspoon
Paprika - 1 teaspoon

(For Green Chutney)
Mint - 10 grams
Coriander - 5 grams
Green chili - 3
Garlic cloves - 4
Cumin - 1/2 teaspoon
Salt - 1 teaspoon
Coriander powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Vinegar - 1 teaspoon
Water - 2 tablespoons

(For Gram Flour Batter)
Gram flour - 210 grams
Salt - 1 teaspoon
Turmeric - 1 teaspoon
Red chili - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Water - 250 milliliters
(For Maggi Noodles)
Water - 500 milliliters
Maggi noodles - 180 grams
Maggi masala - 20 grams

(For Maggi Vada)
Oil - 25 milliliters
Mustard seeds - 1 teaspoon
Asafoetida - 1/8 teaspoon
Ginger garlic paste - 1 tablespoon
Onions - 120 grams
Green chili - 1 tablespoon
Salt - 1 teaspoon
Red chili - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Boiled mashed potatoes - 25 grams

PREPARATION


(For Garlic Chutney)
1. Heat 1 tablespoon oil in a pan, add 8 cloves garlic and stir well.
2. Add 30 grams coconut and cook for 3 - 5 minutes on medium heat.
3. Add 1/2 teaspoon salt, 1 teaspoon paprika and mix it well.
4. Cook for another 2 - 3 minutes on medium heat.
5. Remove it from heat and transfer this into a blender and blend well.
6. Keep aside.

(For Green Chutney)
1. In a blender, add all the ingredients and blend it into a puree.
2. Keep aside.

(For Gram Flour Batter)
1. In a mixing bowl, add all the ingredients except water and mix it well.
2. Add 250 milliliters water and mix it well to make a thick batter. Keep aside.

(For Maggi Noodles)
1. Heat 500 milliliters water in a pan, add 180 grams maggi noodles and mix it well.
2. Cook for 5 - 7 minutes on medium heat.
3. Add 20 grams maggi masala and mix it well.
4. Cook for another 5 - 7 minutes on medium heat.
5. Remove it from heat and keep aside.

(For Maggi Vada)
1. Heat 25 milliliters oil in a heavy skillet, add 1 teaspoon mustard seeds, 1/8 teaspoon asafoetida, 1 tablespoon ginger garlic paste and stir for 2 - 3 minutes.
2. Then, add 120 grams onions and fry till translucent or until it turns golden brown in color.
3. Add 1 tablespoon green chili and stir well.
4. Add 1 teaspoon salt, 1/2 teaspoon red chili, 1/2 teaspoon garam masala and mix it well.
5. Now, add 25 grams boiled mashed potatoes and mix it well.
6. Cook for 5 - 7 minutes on medium heat.
7. Add the cooked maggi noodles and mix it well.
8. Cook for another 5 - 7 minutes on medium heat.
9. Remove it from heat and transfer this into a bowl.
10. Take some mixture in your hands and shape it into a vada.
11. Dip it in the prepared gram flour batter.
12. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
13. Drain it on an absorbent paper.

(For Maggi Vada Pav)
1. Take a pav bun and cut it into half.
2. Add the prepared green chutney on it and spread it evenly.
3. Then, add the prepared garlic chutney on it and spread it evenly.
4. Now, place the prepared maggi vada inside it.
5. Serve.



Cheesy Vada Pav

Asafoetida - 1/4 teaspoon
Mustard seeds - 1/2 teaspoon
Curry leaves - 7 - 8
Turmeric - 1/2 teaspoon
Garlic - 1 teaspoon
Green chili - 1 teaspoon
Boiled mashed potatoes - 400 grams
Salt - 1 teaspoon
Lemon juice - 1 tablespoon
Coriander - 2 tablespoons
Mozzarella cheese - to taste
Gram flour - 150 grams
Salt - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Red chili - 1/2 teaspoon
Baking soda - 1/4 teaspoon
Asafoetida - 1/4 teaspoon
Water - 300 milliliters
