INGREDIENTS


Desi Chole Tikki Burger

Servings - 7

INGREDIENTS
Soaked chickpeas - 200 grams
Cloves - 3 pods
Bay leaf - 1
Black cardamom - 1 pod
Tea bag - 1
Water - 1 litre
Salt - 1/2 teaspoon
Mustard oil - 30 milliliters
Asafoetida - 1/8 teaspoon
Cumin seeds - 1/2 teaspoon
Coriander seeds - 1/2 teaspoon
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Onions - 120 grams
Tomato - 200 grams
Green chili - 1 tablespoon
Salt - 1/2 teaspoon
Paprika - 1/2 teaspoon
Turmeric - 1/4 teaspoon
Dry mango powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Boiled potatoes - 430 grams
Bread crumbs - 50 grams
Onions - 60 grams
Green chili - 1 tablespoon
Coriander - 2 tablespoons
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Chaat masala - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Oil - for frying
Burger buns - 7
Green chutney - to taste
Tamarind chutney - to taste
Onion slices - to taste
Tomato slices - to taste
Garlic sev - to taste

PREPARATION


1. Take a pressure cooker, add 200 grams soaked chickpeas, 3 pods cloves, 1 bay leaf, 1 pod black cardamom, 1 tea bag, 1 litre water, 1/2 teaspoon salt and mix it well.
2. Cover it with lid and cook until you hear 2 - 3 whistles.
3. Open the lid and remove the tea bag and bay leaf from it. Keep aside.
4. Heat 30 milliliters mustard oil in a heavy skillet, add 1/8 teaspoon asafoetida, 1/2 teaspoon cumin seeds, 1/2 teaspoon coriander seeds, 1 tablespoon garlic, 1 tablespoon ginger and stir for 1 - 2 minutes.
5. Then, add 120 grams onions and fry till translucent or until it turns golden brown in color.
6. Now, add 200 grams tomato, 1 tablespoon green chili and mix it well.
7. Saute for 5 - 7 minutes on medium heat or until it turns soft and pulpy.
8. Add 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/4 teaspoon turmeric, 1/2 teaspoon dry mango powder, 1/2 teaspoon garam masala and mix it well.
9. Now, add the boiled chickpeas in it and mix it well.
10. Cover it with lid and cook for about 5 minutes on medium heat.
11. Open the lid and give it a nice stir.
12. Remove it from heat and keep aside.
13. In a mixing bowl, add 430 grams boiled potatoes and mash the potatoes with the help of a food masher.
14. Add 50 grams bread crumbs, 60 grams onions, 1 tablespoon green chili, 2 tablespoons coriander, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon chaat masala, 1/2 teaspoon cumin seeds and mix all the ingredients well.
15. Take some mixture in your hands and shape it into a tikki.
16. Heat some oil in a pan, add the prepared tikki in it.
17. Cook for 3 - 5 minutes on medium heat and flip it gently.
18. Cook until it turns golden brown in color from all side.
19. Remove it from heat and drain it on an absorbent paper. Keep aside.
20. Heat some oil in a pan, place the burger bun on it.
21. Cook for 2 - 3 minutes on medium heat.
22. Remove it from heat and place it on a board.
23. Add some green chutney on burger bun and spread it evenly.
24. On the other bun, add some tamarind chutney on it and spread it evenly.
25. Then, add the prepared chole on it and spread it evenly.
26. Now, add some onion and tomato slices on it.
27. Garnish with some garlic sev.
28. Place the prepared tikki on top of it.
29. Cover it with another bun.
30. Serve.
