Kanda Bhaji Burger

INGREDIENTS

Oil - 1 tablespoon

Garlic - 50 grams

Coconut - 80 grams

Salt - 1 teaspoon

Red chili - 1 teaspoon

Curd - 180 grams

Green chili - 2 tablespoons

Mint - 10 grams

Coriander - 8 grams

Salt - 1 teaspoon

Grated carrots - 230 grams

Grated potatoes - 230 grams

Onions - 300 grams

Gram flour - 150 grams

Salt - 1 teaspoon

Red chili - 1 teaspoon

Turmeric - 1/2 teaspoon

Cumin powder - 1 teaspoon

Coriander powder - 1 teaspoon

Dry mango powder - 1 teaspoon

Chaat masala - 1/2 teaspoon

Dry fenugreek leaves - 1/2 teaspoon

Carom seeds - 1/4 teaspoon

Coriander - 8 grams

Oil - for shallow frying

Butter - 1 tablespoon

PREPARATION

1. Heat 1 tablespoon oil in a pan, add 50 grams garlic and stir for 1 - 2 minutes.

2. Then, add 80 grams coconut and mix it well.

3. Cook for 5 - 7 minutes on medium heat.

4. Add 1 teaspoon salt, 1 teaspoon red chili and mix it well.

5. Remove it from heat and transfer this into a blender and blend well.

6. Keep aside.

7. In a blender, add 180 grams curd, 2 tablespoons green chili, 10 grams mint, 8 grams coriander, 1 teaspoon salt and blend it into a smooth puree.

8. Keep aside.

9. Take a bowl, place a muslin cloth on it.

10. Add 230 grams grated carrots, 230 grams grated potatoes and squeeze it well.

11. Transfer this into a mixing bowl, add 300 grams onions, 150 grams gram flour, 1 teaspoon salt, 1 teaspoon red chili, 1/2 teaspoon turmeric, 1 teaspoon cumin powder, 1 teaspoon coriander

powder, 1 teaspoon dry mango powder, 1/2 teaspoon chaat masala, 1/2 teaspoon dry fenugreek leaves, 1/4 teaspoon carom seeds, 8 grams coriander and mix it well.

12. Take some mixture in your hands and shape it into a tikki.

13. Heat some oil in a pan and shallow fry the tikki until it turns golden brown and crispy from all sides.

14. Remove it from heat and drain it on an absorbent paper.

15. Heat 1 tablespoon butter in a grill pan and place the burger bun on it.

16. Remove it from grill pan and place it on a board.

17. Add the prepared mint sauce on it and spread it evenly.

18. Sprinkle some prepared vada pav masala on it.

19. Then, place the tikki on it.

20. Add some lettuce on top of it.

21. Take the another bun and spread prepared mint sauce, sprinkle prepared vada pav masala on it.

22. Place it on top of it.

23. Serve.
