Kashmiri dry red chili - 4
Water - 60 milliliters
Beetroot - 30 grams
Water - 40 milliliters
Green peas - 90 grams
Carrot - 60 grams
Potato - 120 grams
Water - 400 milliliters
Butter - 25 grams
Cumin seeds - 1/2 teaspoon
Onions - 50 grams
Garlic paste - 30 grams
Bell pepper - 50 grams
Tomato - 50 grams
Salt - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Coriander powder - 1/2 teaspoon
Pav bhaji masala - 2 teaspoons
Hot water - 100 milliliters
Coriander - 2 teaspoons
Lemon juice - 2 tablespoons
Tortillas - 4
Prepared pav bhaji - to taste
Pickled onions - to taste
Garlic chutney - to taste
Cheese - to taste
Butter - to taste
Butter - for shallow frying
PREPARATION
1. In a bowl, add 4 kashmiri dry red chili, 60 milliliters water and soak for 10 minutes.
2. In a blender, add 30 grams beetroot, soaked chili, 40 milliliters water and blend it well. Keep aside.
3. Take a pressure cooker, add 90 grams green peas, 60 grams carrot, 120 grams potato, 400 milliliters water and cover it with lid.
4. Cook until you hear 2 whistles.
5. Open the lid and remove it from heat.
6. Heat 25 grams butter in a pan, add 1/2 teaspoon cumin seeds and stir well.
7. Then, add 50 grams onions and fry till translucent or until it turns golden brown in color.
8. Add 30 grams garlic paste and mix it well.
9. Add the prepared beetroot mixture in it and mix it again.
10. Cook for 5 - 7 minutes on medium heat.
11. Add 50 grams bell pepper, boiled vegetables and mix it well.
12. Cook for another 5 - 7 minutes on medium heat.
13. Add 50 grams tomato and mix it well.
14. Add 1 teaspoon salt, 1/2 teaspoon turmeric powder, , 1/2 teaspoon coriander powder, 2 teaspoons pav bhaji masala and mix it well.
15. Now, add 100 milliliters hot water and mix it well.
16. Cook for 5 - 7 minutes on medium heat.
17. Mash the mixture with the help of a food masher.
18. Add 2 teaspoons coriander, 2 tablespoons lemon juice and mix it well.
19. Cook for another 3 - 5 minutes on medium heat.
20. Remove it from heat and keep aside.
21. Place the tortilla on a board.
22. Make a cut outwards to the edge of the tortilla.
23. Add the prepared pav bhaji on it and spread it evenly.
24. Then, add the pickled onions on it.
25. On the other side add some garlic chutney on it and spread it evenly.
26. In the end add some cheese on it.
27. Top with some butter.
28. Now, start by folding the wrap from the left side of your cut and flip and flip again until you have a completely folded tortilla.
29. Heat some butter on a pan, add the prepared wrap on it and cook until it turns dark brown in color from both sides.
30. Remove it from heat and cut it into half.
31. Serve.
