Rasmalai Cookies

INGREDIENTS

Warm milk - 2 tablespoons
Saffron - 1/4 teaspoon
Egg powder - 2 tablespoons
Water - 45 milliliters
All purpose flour - 250 grams
Milk powder - 2 tablespoons
Corn flour - 2 tablespoons
Baking powder - 1/2 teaspoon
Organic food color - 1/4 teaspoon
Butter - 60 grams
Powdered sugar - 100 grams
Rasmalai essence - 1 teaspoon
Almonds - to taste
Pistachios - to taste
Dry rose petals - to taste

PREPARATION


1. In a bowl, add 2 tablespoons warm milk, 1/4 teaspoon saffron and mix it well.
2. Soak for 30 minutes.
3. In a mixing bowl, add 2 tablespoons egg powder, 45 milliliters water and mix it well.
4. In a another mixing bowl, add 250 grams all purpose flour, 2 tablespoons milk powder, 2 tablespoons corn flour, 1/2 teaspoon baking powder, 1/4 teaspoon organic food color and mix it well.
5. In a another mixing bowl, add 60 grams butter, 100 grams powdered sugar and mix it well.
6. Then, add 1 teaspoon rasmalai essence, prepared egg mixture, soaked saffron milk and mix it well.
7. Now, add the prepared flour mixture and mix it well.
8. Knead it into a smooth soft dough.
9. Refrigerate the dough for 20 minutes.
10. Take a ball from dough and flatten it with the help of a rolling pin.
11. Cut out a circle from it.
12. Place it on a baking tray.
13. Brush it with soaked saffron milk.
14. Add some almonds, pistachios and dry rose petals on it.
15. Preheat the oven to 350°F/180°C. Bake for 10 - 12 minutes.
16. Remove it from oven.
17. Serve or store in an airtight container.
