Spinach & Cheese Stuffed Pocket Paratha

INGREDIENTS
All purpose flour - 250 grams
Salt - 1/2 teaspoon
Oil - 15 milliliters
Water - 130 milliliters
Oil - 15 milliliters
Garlic - 1 tablespoon
Onions - 60 grams
Spinach - 150 grams
Chilli flakes - 1/4 teaspoon
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Feta cheese - 120 grams
Mozzarella cheese - to taste
Water - for brushing
Oil - for brushing
PREPARATION
1. In a mixing bowl, add 250 grams all purpose flour, 1/2 teaspoon salt, 15 milliliters oil, 130 milliliters water and and knead it into a smooth soft dough.
2. Rest the dough for 15 minutes.
3. Heat 15 milliliters oil in a skillet, add 1 tablespoon garlic and stir well.
4. Then, add 60 grams onions and fry till translucent.
5. Now, add 150 grams spinach and mix it well.
6. Cook for 5 - 7 minutes on medium heat.
7. Add 1/4 teaspoon chilli flakes, 1/2 teaspoon salt,, 1/4 teaspoon black pepper and mix it well.
8. Cover it with lid and book for about 5 - 7 minutes on medium heat.
9. Open the lid and give it a nice stir.
10. Remove it from heat and allow it to cool for about 8 - 10 minutes.
11. Transfer this into a bowl, add 120 grams feta cheese and mix it well.
12. Take a ball from dough and dust it with flour.
13. Flatten it with the help of a rolling pin.
14. Add some prepared spinach mixture in the center.
15. Add some mozzarella cheese on top of it.
16. Fold the one side of dough and brush it with water.
17. Fold the other side too.
18. Brush the another of dough with water.
19. Fold it again to make a square.
20. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes.
21. Flip it gently and brush it with oil.
22. Flip it again and brush the other side too.
23. Cook until it turns golden brown in color from all sides.
24. Remove it from heat and cut it into pieces.
25. Serve hot.
