Spinach Tikki Toast

 

Servings - 2 - 3

 

INGREDIENTS
Water - 1 litre

Spinach - 150 grams

Cold water - 500 milliliters

Boiled mashed potatoes - 250 grams

Bread crumbs - 2 tablespoons

Salt - 1 teaspoon

Black pepper - 1/4 teaspoon

Cumin powder - 1 teaspoon

Oil - for shallow frying

Brown bread slices

Butter - for shallow frying

Ketchup - to taste

Lettuce - to taste

Cheese slices - to taste

Cherry tomato - to taste

 

PREPARATION

  1. Take a skillet, add 1 litre water, 150 grams spinach and mix it well.
  2. Bring it to a boil.
  3. Boil for 3 - 5 minutes on medium heat.
  4. Remove it from heat and transfer this into a bowl, add 500 milliliters cold water.
  5. Rest for 5 minutes.
  6. Transfer this into a blender and blend it into a puree.
  7. Transfer this into a mixing bowl, add 250 grams boiled mashed potatoes, 2 tablespoons bread crumbs, 1 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon cumin powder and mix all the ingredients well.
  8. Take some mixture in your hands and shape it into a tikki.
  9. Heat some oil in a pan, add the prepared tikki on it.
  10. Shallow fry until it turns golden brown in color from both sides.
  11. Remove it from heat and keep aside.
  12. Take a brown bread slice and cut out circles from it.
  13. Heat some butter on a tawa and shallow fry these until golden brown and crispy.
  14. Remove it from heat and place it on a board.
  15. Add some ketchup and spread it evenly.
  16. Place a lettuce, prepared tikki, cheese slice and cheery tomato on it.
  17. Prick a toothpick inside it.
  18. Serve.
