Vegetable Couscous

INGREDIENTS

Olive oil -  1 tablespoon

Onions - 90 grams

Carrot -  40 grams

Green beans - 40 grams

Bell pepper - 120 grams

Zucchini - 50 grams

Garlic powder  - 1/2 teaspoon

Salt - 1 teaspoon

Black pepper - 1/2 teaspoon

Dried basil - 1 1/2 teaspoon

Hot sauce - 1 teaspoon

Vegetable stock - 500 milliliters

Couscous - 250 grams

 

PREPARATION

  1. Heat 1 tablespoon olive oil in a wok, add 90 grams onion and sauté for a minute.
  2. Now, add 40 grams carrots, 40 grams green beans, 120 grams bell pepper, 50 grams zucchini and cook for 3-5 minutes.
  3. Add 1/2 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon black pepper and 1 1/2 teaspoons dried basil.
  4. Mix well and cook for 5 minutes on medium heat.
  5. Now, add 1 teaspoon hot sauce and mix well.
  6. Add 500 milliliters vegetable stock and stir well.
  7. Now, add 250 grams couscous and mix well.
  8. Cover with lid and cook for 5-7 minutes on medium heat.
  9. Remove the lid and give it a stir.
  10. Remove the pan from heat.
  11. Serve hot.
