Sriracha Spicy Ramen Noodles

Servings - 2 - 3

INGREDIENTS
Sesame oil - 2 tablespoons
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Spring onions - 70 grams
Tomato puree - 90 grams
Salt - 1/2 teaspoon
Vegetable broth - 300 milliliters
Sriracha sauce - 1 tablespoon
Soy sauce - 1 teaspoon
Vinegar - 1 teaspoon
Ramen noodles - 120 grams
Ramen noodle masala - 2 tablespoons
Coriander - 1 tablespoon
Boiled eggs
Jalapeños - for garnishing
Spring onions - for garnishing

PREPARATION


1. Heat 2 tablespoons sesame oil in a skillet, add 1 tablespoon garlic, 1 tablespoon ginger and stir well.
2. Then, add 70 grams spring onions and fry till translucent or until it turns golden brown in color.
3. Now, add 90 grams tomato puree and mix it well.
4. Cook for 5 - 7 minutes on medium heat.
5. Add 1/2 teaspoon salt and mix it well.
6. Add 300 milliliters vegetable broth and mix it well.
7. Bring it to a boil.
8. Add 1 tablespoon sriracha sauce, 1 teaspoon soy sauce, 1 teaspoon vinegar and mix it well.
9. Then, add 120 grams ramen noodles and mix it well.
10. Cook for 5 - 7 minutes on medium heat.
11. Now, add 2 tablespoons ramen noodle masala and mix it well.
12. Cover it with lid and cook for about 8 - 10 minutes on medium heat.
13. Open the lid and give it a nice stir.
14. Add 1 tablespoon coriander and mix it well.
15. Remove it from heat.
16. Add the prepared noodles into a serving dish.
17. Add a boiled egg on top of it.
18. Garnish with jalapeños and spring onions.
19. Serve.
