Dubki Wale Aloo

Servings - 8

INGREDIENTS
Coriander - 3 grams
Black cardamom - 1 pod
Black peppercorns - 1/2 teaspoon
Cinnamon stick - 1
Cloves - 3 pods
Asafoetida - 1/4 teaspoon
Green Chili - 1 tablespoon
Ginger - 1 tablespoon
Spinach - 10 grams 
Water - 80 milliliters
Gram flour - 2 tablespoons
Water - 100 milliliters
Boiled mashed potatoes - 520 grams 
Water - 700 milliliters
Paprika - 1 teaspoon
Turmeric - 1/4 teaspoon
Salt - 1 teaspoon
Black salt - 1/4 teaspoon
Coriander powder - 1 teaspoon
Ghee - 1 tablespoons 
Cumin seeds - 1 teaspoon
Dry red chili - 3
Paprika - 1/2 teaspoon
Coriander - 1 tablespoon
Coriander - for garnishing

PREPARATION


1. In a blender,. Add 3 grams coriander, 1 pod black cardamom, 1/2 teaspoon black peppercorns, 1 cinnamon stick, 3 pods cloves, 1/4 teaspoon asafoetida, 1 tablespoon green chili, 1 tablespoon ginger, 10 grams spinach, and 80 milliliters water. Blend until smooth and keep aside
2. In a bowl, add 2 tablespoons gram flour and 100 milliliters water. whisk well to combine.
3. In a skillet, add blended spinach mixture, 520 grams boiled mashed potatoes, and 700 milliliters water. Stir well and bring to a boil.
4. Add 1 teaspoon paprika, 1/4 teaspoon turmeric, 1 teaspoon salt, 1/4 teaspoon Balck salt, and 1 teaspoon coriander powder. Mix thoroughly.
5. Add the prepared gram flour mixture and mix well. Cover and cook for 10 - 15 minutes.
6. Open the lid, stir well and remove from the heat.
7. Heat 1 tablespoon ghee in a pan, add 1 teaspoon cumin powder and 3 dry red chili. Stir well.
8. Add 1/2 teaspoon paprika and mix well. Remove from heat and pour this over to the prepared aloo. Mix well, cover and cook for 1 - 2 minutes.
9. Add 1 tablespoon coriander and mix well. Remove from the heat.
10. Garnish with coriander.
11. Serve.
