Loaded Volcano Sandwich

Servings - 6

INGREDIENTS
Butter - 2 tablespoons
Oats flour - 2 tablespoons
Milk - 200 milliliters
Processed cheese - 40 grams 
Chilli flakes - 1/2 teaspoon
Mix herbs - 1/2 teaspoon
Pizza sauce - 2 tablespoons
Peri peri masala - 1 teaspoon
Water - 300 milliliters
Salt - 1/2 teaspoon
Sweet corns - 100 grams 
Paneer - 190 grams 
Onions - 100 grams 
Bell pepper - 50 grams 
Cabbage - 70 grams 
Processed cheese - 25 grams 
Carrots - 60 grams 
Salt - 1/2 teaspoon
Paprika - 1/2 teaspoon
Schezwan sauce - 30 grams 
Peri peri masala - 1 teaspoon
Chilli flakes - 1/2 teaspoon
White bread slices - 9
Pizza sauce - 2 tablespoons
Butter - 40 grams 
Coriander - for garnishing

PREPARATION


1. Heat 2 tablespoons butter in a pan, add 2 tablespoons oats flour and cook for 3 - 4 minutes over medium heat.
2. Add 200 milliliters milk and whisk well to combine.
3. Add 40 grams processed cheese, 1/2 teaspoons chilli flakes, 1/2 teaspoon mix herbs, 2 tablespoons pizza sauce, and 1 teaspoon peri peri masala. Mix well to combine and cook for 3 - 4 minutes. Remove from the heat.
4. In another pan, boil 300 milliliters water. Add 100 grams sweet corns and boil for 3 - 4 minutes. 
5. Remove from the heat, strain the corns and transfer it into a bowl. Add 190 grams paneer, 100 grams onions, 50 grams bell pepper, 70 grams cabbage, 25 grams processed cheese, 60 grams carrots, 1/2 teaspoon salt, 1/2 teaspoon paprika, 30 grams schezwan sauce, 1 teaspoon peri peri masala and 1/2 teaspoon chilli flakes. Mix well to combine.
6. Place a bread slice on a board, add some pizza sauce on it and spread evenly. Add some prepared vegetable mixture on it.
7. Cover with another bread slice and apply some butter on it. Add the vegetable mixture again and cover with another bread slice. Apply some butter on top.
8. Now, place it in a griller and grill for 2 - 3 minutes. Remove from the griller and cut into four slices.
9. Garnish with the prepared sauce and coriander.
10. Serve.
