Broccoli Almond Soup With Spinach

INGREDIENTS

Water - 850 milliliters

Spinach - 70 grams

Cold water

Oil - 1/2 teaspoon

Garlic - 2 teaspoons

Onion - 50 grams

Almond - 1 tablespoon

Broccoli - 70 grams

Salt - 1/2 teaspoon

Black pepper - 1/4 teaspoon

Cinnamon powder - 1/8 teaspoon

Milk - 750 milliliters

Almond - 1 tablespoon

 

 

PREPARATION

  1. Heat, 850 milliliters water in a heavy skillet, add 70 grams washed spinach and mix it well.
  2. Blanch for 5 - 7 minutes on medium heat.
  3. Remove it from heat and strain the spinach.
  4. Add the blanched spinach in cold water.
  5. Let it rest for 5 minutes.
  6. Now, strain and transfer this into a blender
  7. Blend it into a puree and keep aside.
  8. Heat 1/2 teaspoon oil in a skillet, add 2 teaspoons garlic and stir till it changes colour.
  9. Now, add 50 grams onion and sauté for 2-3 minutes.
  10. Then, add 1 tablespoon almonds, roast it and add 70 grams broccoli stir well.
  11. Cook for 5-7 minutes on medium heat.
  12. Now, add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/8 teaspoon cinnamon powder and mix it well.
  13. Now, add blended spinach puree and mix it well.
  14. After this , add 750 milliliters milk and stir it properly
  15. Cook for 5 - 7 minutes on medium heat.
  16. Garnish with almonds.
  17. Serve hot.
