Paneer Tikki Corn Masala

INGREDIENTS

Grated paneer - 300 grams

Sweet corn - 200 grams

Green chili - 1 tablespoon

Ginger paste - 1 tablespoon

Garlic paste - 1 tablespoon

Dry mango powder - 1 teaspoon

Black pepper - 3/4 teaspoon

Salt - 1 teaspoon

Corn flour - 50 grams

Oil - for shallow frying

Ghee - 50 milliliters
Onions - 300 grams

Cashews - 100 grams

Water - 300 milliliters, divided

Ghee - 15 milliliters

Garlic - 1 tablespoon

Red chili - 1 teaspoon

Garam masala - 1 teaspoon

Tandoori masala - 1 teaspoon

Salt - 1 teaspoon

Curd - 200 grams

Fresh cream - 100 grams

Coriander - 10 grams

PREPARATION

1. In a mixing bowl, add 300 grams grated paneer, 200 grams sweet corn, 1 tablespoon green chili, 1 tablespoon ginger paste, 1 tablespoon garlic paste, 1 teaspoon dry mango powder, 3/4 teaspoon black pepper, 1 teaspoon salt and mix it well.

2. Add 50 grams corn flour and mix it well.

3. Take some mixture in your hands and shape it into a tikki.

4. Heat some oil in a pan and shallow fry these tikki until it turns golden brown and crispy from all sides.

5. Remove it from heat and drain it on an absorbent paper.

6. Keep aside.

7. Heat 50 milliliters ghee in a another pan, add 300 grams onions and fry till translucent or until it turns golden brown in color.

8. Remove it from heat and transfer this into a blender and blend it into a smooth paste.

9. Keep aside.

10. In a bowl, add 100 grams cashews, 200 milliliters water and soak for 1 hour.

11. Add the soaked cashews in a blender, add 100 milliliters water and blend it into a smooth paste.

12. Keep aside.

13. Heat 15 milliliters ghee in a skillet, add 1 tablespoon garlic and stir well.

14. Add 1 teaspoon red chili, 1 teaspoon garam masala, 1 teaspoon tandoori masala, 1 teaspoon salt and mix it well.

15. Then, add the blended onion paste and mix it well.

16. Now, add the blended cashew paste and mix it again.

17. Cook for 2 - 3 minutes on medium heat.

18. Add 200 grams curd and mix it well.

19. Then, add 100 grams fresh cream and mix it again.

20. Cook for 5 - 7 minutes on medium heat.

21. Add 10 grams coriander and mix it well.

22. Now, add the prepared ticks in it and mix it well.

23. Cook for 5 - 7 minutes on medium heat.

24. Remove it from heat.

25. Garnish with fresh cream and coriander.

26. Serve.
