INGREDIENTS
(For Schezwan Chutney)
Dry red chili - 20 grams
Hot water - 100 milliliters
Oil - 1 tablespoon
Garlic - 1 tablespoon
Ginger - 1 tablespoon
Water - 50 milliliters
Black pepper - 1/2 teaspoon
Soy sauce - 1 teaspoon
White vinegar - 1 tablespoon
Ketchup - 2 tablespoons
Sugar - 1 teaspoon
Salt - 1/2 teaspoon
(For Schezwan Mushrooms)
Oil - 2 tablespoons
Garlic - 1 tablespoon
Dry red chili - 2
Onions - 100 grams
Mushrooms - 150 grams
Salt - 1/2 teaspoon
Turmeric - 1/2 teaspoon
Red chili - 1/2 teaspoon
Prepared schezwan chutney - 2 tablespoons
PREPARATION
(For Schezwan Chutney)
1. In a bowl, add 20 grams dry red chili, 100 milliliters hot water and soak for 30 minutes.
2. Transfer this into a blender and blend it into a paste.
3. Heat 1 tablespoon oil in a pan, add 1 tablespoon garlic, 1 tablespoon ginger and stir well.
4. Then, add the blended mixture and mix it well.
5. Cook for 5 - 7 minutes on medium heat.
6. Add 50 milliliters water and mix it well.
7. Cover it with lid and cook for about 5 minutes on medium heat.
8. Open the lid and give it a nice stir.
9. Add 1/2 teaspoon black pepper, 1 teaspoon soy sauce, 1 tablespoon white vinegar, 2 tablespoons ketchup, 1 teaspoon sugar, 1/2 teaspoon salt and mix it well.
10. Again cover it with lid and cook for about 5 minutes on medium heat.
11. Open the lid and give it a nice stir.
12. Remove it from heat and keep aside.
(For Schezwan Mushrooms)
1. Heat 2 tablespoons oil in a skillet, add 1 tablespoon garlic, 2 dry red chili and stir well.
2. Then, add 100 grams onions and fry till translucent or until it turns golden brown in color.
3. Now, add 150 grams mushrooms and mix it well.
4. Cook for 5 - 7 minutes on medium heat.
5. Add 1/2 teaspoon salt, 1/2 teaspoon turmeric, 1/2 teaspoon red chili and mix it well.
6. Cover it with lid and cook for about 10 minutes on medium heat.
7. Open the lid and give it a nice stir.
8. Add 2 tablespoons prepared schezwan chutney and mix it well.
9. Cook for another 3 - 5 minutes on medium heat.
10. Remove it from heat.
11. Serve hot.
